Buffalo Chicken Dip

This Buffalo Chicken Dip is made with shredded rotisserie chicken, ample shredded cheese, cream cheese, buffalo sauce, and blue cheese dressing all baked until golden brown & melty.

Dietary Swaps:

  • Gluten-Free: The dip itself can easily be gluten-free. Check your buffalo sauce, dressing, and shredded cheese to make sure they're gluten-free, then serve with gluten-free chips or vegetables.
  • Lower Carb: Skip the chips and serve with celery, cucumber, bell peppers, or other low-carb vegetables.

Tips & Notes:

  • Use rotisserie chicken: This is one of those recipes where using a store-bought rotisserie chicken makes life much easier.
  • Don't skip the foil: Covering the dish while it bakes helps keep the dip from drying out.
  • Watch the broiler: Once you uncover the dip, it only needs a few minutes under the broiler to get bubbly and golden. Keep an eye on it because it can brown quickly.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until warmed through.

Buffalo Chicken Dip

This Buffalo Chicken Dip is made with shredded rotisserie chicken, ample shredded cheese, cream cheese, buffalo sauce, and blue cheese dressing all baked until golden brown & melty.

Ingredients
  

  • Meat from 1 rotisserie chicken shredded
  • 8 ounces cream cheese
  • ½ cup blue cheese dressing
  • ½ cup Frank's RedHot Buffalo sauce
  • 2-2 ½ cups shredded cheese blend divided
  • 1 green onion sliced, plus more for topping
  • Butter for greasing the baking dish
  • Chips for serving

Instructions
 

  • Preheat the oven to 350°F.
  • Using two forks, shred the rotisserie chicken and set aside.
  • In a saucepan over medium heat, combine the cream cheese, Frank's RedHot Buffalo sauce, and blue cheese dressing. Whisk until smooth and well combined.
  • Remove the saucepan from the heat.
  • Add the shredded chicken, 1-1 ½ cups of the shredded cheese, and sliced green onion. Fold everything together until evenly combined.
  • Butter a 9x9-inch baking dish and add the buffalo chicken mixture.
  • Cover the dish with foil and bake for 25-30 minutes, or until hot and bubbly.
  • Remove the foil and sprinkle the remaining shredded cheese over the top.
  • Turn the oven to broil and broil until the cheese is melted, bubbly, and lightly golden. Watch closely so it doesn't burn.
  • Sprinkle with additional sliced green onion and serve hot with chips.
