Easy Olive Cheese Bread

This easy and irresistible Olive Cheesy Bread is a perfect blend of buttery garlic bread topped with melted mozzarella, Parmesan, and Mediterranean olives. Finished with a drizzle of fresh herb oil, it’s a simple yet flavorful appetizer or side dish that everyone will love!

Ingredients
  

  • 2 12- inch loaves of baguette
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup shredded Parmesan cheese
  • ½ cup sliced Mediterranean olives

Garlic Butter:

  • ¼ cup butter softened
  • 1 tablespoon minced garlic
  • 1 tablespoon finely chopped parsley
  • Salt & pepper to taste

Herb Oil:

  • 1 tablespoon finely chopped parsley
  • 1 tablespoon olive oil
  • Salt & pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Slice the baguette loaves in half lengthwise.
  • Mix the garlic butter ingredients together, then spread evenly over the cut sides of the bread.
  • Place the bread on a baking sheet and bake for 10 minutes, until the bread is lightly golden.
  • Remove from the oven and top with 1 cup mozzarella cheese and sliced olives. Sprinkle with the remaining mozzarella and Parmesan cheese.
  • Return the bread to the oven and bake for an additional 5-6 minutes, or until the cheese is melted.
  • Switch the oven to broil for 2-3 minutes to get the top golden and crispy.
  • Remove from the oven, slice into pieces, and drizzle with the herb oil mixture.
