Shaved Brussels Sprouts Salad with Bacon

Shaved Brussels sprouts are one of my favorite greens to use in salads. Super versatile, and surprisingly easy to prep. This Shaved Brussels Sprouts Salad with bacon is tossed with roasted pecans, creamy avocado, crumbled Gorgonzola, and a fig balsamic dressing.

  • Gorgonzola Cheese: Sharpy, tangy, and 'funky' in the best way! If you aren't a Gorgonzola or blue cheese fan, no worries! You can swap it out for crumbled goat cheese or feta.
  • Pecans: For crunch.
  • Avocado: Soft and buttery.
  • Fig Balsamic Dressing: A simple mix of fig jam, balsamic, and olive oil to tie it all together.

  • Dairy-Free: Omit the Gorgonzola or sub it for a dairy-free cheese such as Follow Your Heart 'Blue Cheese' Crumbles.
  • Nut-Free: Omit the pecans and swap them for sunflower seeds.

  2. Cook and crumble bacon, chop pecans, dice avocado, and crumble the cheese.
  3. Whisk together fig jam, olive oil, balsamic vinegar, and a pinch of salt.
  4. Add all ingredients to a large bowl, pour over the dressing, and gently toss to combine.

Tips & Notes:

Ingredients
  

  • 1 lb Brussels sprouts
  • 4-6 strips thick-cut bacon cooked and crumbled
  • ⅓ cup roasted pecans roughly chopped
  • ¼ cup crumbled Gorgonzola cheese
  • 1 avocado diced

For the Fig Balsamic Dressing:

  • ¼ cup fig jam
  • 2 tablespoons extra virgin olive oil
  • 1-2 teaspoons balsamic vinegar
  • Kosher salt to taste

Instructions
 

  • Using a mandoline, sharp knife, or food processor, thinly slice Brussels sprouts.
  • In a large mixing bowl, combine shaved Brussels sprouts, crumbled bacon, roasted pecans, Gorgonzola, and diced avocado.
  • In a small bowl, whisk together fig jam, olive oil, balsamic vinegar, and salt.
  • Pour dressing over salad and gently toss to combine. Serve immediately.
