Shaved Brussels sprouts are one of my favorite greens to use in salads. Super versatile, and surprisingly easy to prep. This Shaved Brussels Sprouts Salad with bacon is tossed with roasted pecans, creamy avocado, crumbled Gorgonzola, and a fig balsamic dressing.

Why You'll Love this Shaved Brussels Sprouts Salad:
- A Unique Salad Green. Shaved Brussels sprouts have a very light, delicate texture that is unique from other salad greens.
- That Fig Balsamic Dressing, though. Subtly sweet, tangy, and oh-so-delicious. Also, I know it might sound strange, but fig and Gorgonzola is one of THE best flavor combinations.
- Surprisingly Quick & Easy: Using a mandoline slicer or food processor makes shaving Brussels sprouts a breeze. Just cook the bacon, whisk the dressing, and toss it all together.

Key Ingredients:
- Brussels Sprouts: Shaved thin for a delicate salad base with a mild flavor.
- Bacon: Thick-cut & crumbled.
- Gorgonzola Cheese: Sharpy, tangy, and 'funky' in the best way! If you aren't a Gorgonzola or blue cheese fan, no worries! You can swap it out for crumbled goat cheese or feta.
- Pecans: For crunch.
- Avocado: Soft and buttery.
- Fig Balsamic Dressing: A simple mix of fig jam, balsamic, and olive oil to tie it all together.
Dietary Swaps:
- Dairy-Free: Omit the Gorgonzola or sub it for a dairy-free cheese such as Follow Your Heart 'Blue Cheese' Crumbles.
- Nut-Free: Omit the pecans and swap them for sunflower seeds.
- Gluten-Free: The salad is naturally gluten-free as written, but as always, double check labels on all pre-packaged ingredients to ensure they are certified gluten-free.
- Vegetarian: Leave out the bacon or sub it for plant-based bacon bits.
Recipe Variations:
- Not a fan of fig or balsamic? Try a different dressing such as honey mustard or buttermilk ranch.
- Add Fruit: If you like a bit of sweetness in your salads, try this recipe with sliced apple or dried cranberries.
- Make it a Meal: This salad is great on it's own, but you can bulk it up by adding chopped grilled chicken or sliced steak.
- Not a Gorgonzola fan? Try crumbled goat cheese, feta, or shaved Parmesan.

FAQs:
Yes! Raw Brussels sprouts are great sources of vitamins (especially vitamin K & C), antioxidants, folate, potassium, calcium, and iron.
Rinse under cool water, remove any dry or damaged leaves, and dry them thoroughly before slicing.
Slightly. They have a very mild, earthy flavor, but not as strong as cabbage.
