Not only is this side dish low-carb friendly, it all comes together in under 30 minutes!

Cheesy Bacon Brussels Sprouts Ingredients:
- Brussels Sprouts- small leafy green vegetables related to cabbages. Their flavor is earthy and slightly sweet and they can be cooked in so many different ways. For this recipe they will be first pan-fried to get a nice char, then roasted until tender.
- Bacon- bacon adds a wonderful salty, savory element to this side dish.
- Butter- either salted or unsalted can be used.
- Minced Garlic- always.
- Mozzarella Cheese- mozzarella cheese melts easily and has a mild creamy flavor.
Substitutions & Variations:
- Try adding more veggies! Butternut squash is a great option for adding a bit of sweetness to your dish.
- Not a brussels sprouts fan? This recipe also works well with broccoli!
- Try a different cheese! Gouda adds a wonderful smokey flavor, or try cheddar cheese for a bit of sharpness.

How to Make Cheesy Bacon Brussels Sprouts:
- Pan-Fry Bacon & Brussels–
- Preheat oven to 425F.
- Meanwhile, heat a frying pan over medium-high heat. Add strips of bacon and cook until crispy- about 4-6 minutes per side. Remove bacon from pan and add to a paper towel lined plate to drain grease.
- Pour most of bacon grease from pan, leaving 1-2 tbsp. Add cut brussels sprouts and kosher salt to pan. Toss brussels to coat in bacon grease then spread into a single layer. Let cook undisturbed about 4-6 minutes, until brussels begin to char.
- Add butter and minced garlic to pan, stir until butter has melted and garlic has become fragrant. Remove from heat.
- Bake & Finish–
- Transfer brussels sprouts to a lightly greased baking sheet and spread into a single layer. Bake until tender and easily pierced with a fork, about 10-12 minutes.
- Remove pan from oven and top brussels with shredded mozzarella cheese and crumbled bacon. Return pan to oven and broil until cheese has melted. Enjoy!
Cheesy Bacon Brussels Sprouts Leftovers:
- This side dish is best served fresh, but leftovers can be kept in an air tight container for 2-3 days in the refrigerator.
- To reheat, preheat oven to 375F. Transfer brussels to an oven safe baking dish, cover with foil, and bake 15-20 minutes until cheese has melted and brussels are warmed through.

- 1.5 lb brussels sprouts ends trimmed and cut in half lengthwise
- 1/2 tsp kosher salt
- Fresh cracked pepper
- 1 tbsp butter

- 1 1/2 cups shredded mozzarella cheese
