This old fashioned Pimento Cheese recipe is made with cream cheese, mayo, grated onion, cheddar cheese, and pimento peppers.

A Few Ingredient Notes:
- Onion: Grating the onion keeps the pieces very small while adding plenty of flavor.
- Pimentos: A jar of chopped pimentos makes this incredibly easy. Just add them straight in.
- Cheddar Cheese: I recommend using a block of cheddar and grating it yourself for the best texture.
Dietary Swaps:
- Gluten-Free: The pimento cheese itself is naturally gluten-free. Just serve it with gluten-free crackers or vegetables.
- Lower Carb: Serve with celery, bell peppers, cucumber, or other low-carb vegetables instead of crackers.
Tips & Recipe Notes:
- Grate your own cheese. Pre-shredded cheese can contain anti-caking ingredients that keep it from blending as smoothly.
- Don't over-process. Pulse the cheddar and pimentos just until everything is incorporated and the texture is where you want it.
- Chill before serving. Refrigerating the pimento cheese gives it time to firm up and lets the flavors come together.
- Make it ahead. This is a great appetizer to prepare earlier in the day or even the day before.
- Storage: Store leftover pimento cheese in an airtight container in the refrigerator for up to 5 days.
