- Kielbasa: Or really any slice smoked sausage will work. I have also used beef and turkey variations for this recipe as well!
- Mixed Beans: Use a blend of your favorite beans!
- Honey & Brown Sugar: It might sound strange, but adding just a hint of sweetness really brings this cowboy bean recipe to top notch!
- White Wine (Optional): Deglazes the pot and adds a hint of balancing acidity.
- Cinnamon: To round everything out.

Dietary Substitutions:
- Gluten-Free/ Dairy-Free: This recipe is naturally gluten & dairy free, but double check the labels of all store bought ingredients if you have an allergy.
- No Wine: Replace wine with a splash of extra broth to deglaze the pan.

Baked Cowboy Beans
If you're in the mood for a super savory, comforting, one pot meal, I've got you covered with these Baked Cowboy Beans. Made with sausage, bacon, garlic, and 4 different kinds of beans!
Ingredients
- 6 slices thick-cut bacon chopped
- ½ yellow onion diced
- ½ lb ground beef
- 6 oz kielbasa sausage sliced
- 2 tablespoon garlic roughly chopped
- ¼ cup dry white wine
- 1 28 oz can original baked beans, not drained
- 1 15 oz can kidney beans, drained
- 1 15 oz can cannellini beans, drained
- 1 15 oz can black beans, drained
- ½ cup chicken broth
- ⅓ cup ketchup
- 2 tablespoon honey
- 1 tablespoon brown sugar
- 1 teaspoon Dijon mustard
- Pinch cinnamon
- Salt & pepper to taste
Instructions
- Preheat oven to 350°F.
- In a Dutch oven or oven-safe pot, cook chopped bacon over medium-high heat until browned and crispy, about 8-12 minutes. Remove bacon and set aside, leaving grease in the pot.
- Add ground beef, onion, and kielbasa. Cook 6-8 minutes until browned.
- Stir in garlic and cook 1-2 minutes until fragrant.
- Pour in white wine and scrape up browned bits from the bottom of the pot.
- Stir in baked beans, kidney beans, cannellini beans, black beans, broth, ketchup, honey, brown sugar, Dijon mustard, cinnamon, and cooked bacon.
- Mash a few beans against the side of the pot to help thicken the mixture.
- Cover and bake 60-90 minutes, stirring every 30 minutes. Add more broth if needed.
- Taste and adjust seasoning before serving. Enjoy with cornbread or mashed potatoes.
