Ingredient Notes:

  • Bacon: Crispy thick cut bacon makes everything better!
  • Kielbasa: Or really any slice smoked sausage will work. I have also used beef and turkey variations for this recipe as well!
  • Mixed Beans: Use a blend of your favorite beans!
  • Honey & Brown Sugar: It might sound strange, but adding just a hint of sweetness really brings this cowboy bean recipe to top notch!
  • White Wine (Optional): Deglazes the pot and adds a hint of balancing acidity.
  • Cinnamon: To round everything out.

Dietary Substitutions:

  • Gluten-Free/ Dairy-Free: This recipe is naturally gluten & dairy free, but double check the labels of all store bought ingredients if you have an allergy.
  • No Wine: Replace wine with a splash of extra broth to deglaze the pan.
  • Make it Spicy: Add a few dashes (or a tablespoon or two if that's you're thing!) of your favorite hot sauce before baking. Hot sausage is always a nice choice as well.

Variations:

  • Add Extra Veggies: Such as chopped bell peppers, canned tomatoes, or veggies.
  • Add extra Broth: To make this recipe 'soupier'.

Tips & Storage:

  • Don't drain the baked beans! This helps create the sauce for your baked cowboy beans.
  • Mashing a few beans on the side of the pot releases starch and helps thicken the mixture.
  • Stir every 30 or minutes or so while baking to prevent sticking.
  • Store leftovers in an airtight container in the fridge for up to 5 days. reheat in the microwave or on the stovetop.

Baked Cowboy Beans

Ingredients
  

  • 6 slices thick-cut bacon chopped
  • ½ yellow onion diced
  • ½ lb ground beef
  • 6 oz kielbasa sausage sliced
  • 2 tablespoon garlic roughly chopped
  • ¼ cup dry white wine
  • 1 28 oz can original baked beans, not drained
  • 1 15 oz can kidney beans, drained
  • 1 15 oz can cannellini beans, drained
  • 1 15 oz can black beans, drained
  • ½ cup chicken broth
  • ⅓ cup ketchup
  • 2 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard
  • Pinch cinnamon
  • Salt & pepper to taste

Instructions
 

  • Preheat oven to 350°F.
  • In a Dutch oven or oven-safe pot, cook chopped bacon over medium-high heat until browned and crispy, about 8-12 minutes. Remove bacon and set aside, leaving grease in the pot.
  • Add ground beef, onion, and kielbasa. Cook 6-8 minutes until browned.
  • Stir in garlic and cook 1-2 minutes until fragrant.
  • Pour in white wine and scrape up browned bits from the bottom of the pot.
  • Stir in baked beans, kidney beans, cannellini beans, black beans, broth, ketchup, honey, brown sugar, Dijon mustard, cinnamon, and cooked bacon.
  • Mash a few beans against the side of the pot to help thicken the mixture.
  • Cover and bake 60-90 minutes, stirring every 30 minutes. Add more broth if needed.
  • Taste and adjust seasoning before serving. Enjoy with cornbread or mashed potatoes.
