Smoked Sausage Sandwich
Made with browned smoked sausage, garlic butter toasted bread, a creamy pesto aioli, and melty mozzarella, topped with arugula, and roasted red peppers.
Ingredients
Garlic Butter:
- 2 tablespoon butter
- 1 teaspoon finely minced garlic
- ½ teaspoon Italian seasoning
Pesto Aioli:
- 2 tablespoon mayo
- ½ -1 tablespoon pesto
Sandwich:
- 4 slices bread or 2 rolls halved
- 2 smoked sausage links beef, pork, or turkey
- 4 slices fresh mozzarella more or less as needed
- ½ cup arugula
- ¼ cup roasted red peppers sliced
Instructions
- Microwave butter and garlic 5-10 seconds until softened. Stir in Italian seasoning; set aside.
- Mix mayo with ½ tablespoon pesto. Taste and adjust with more pesto if desired.
- Heat a frying pan with a little oil over medium-high. Slice sausage links in half lengthwise and cook a few minutes per side until browned.
- Spread garlic butter on the cut sides of the bread. Toast in the skillet until edges are crisp.
- Spread pesto aioli on the bottom piece of bread. Add mozzarella slices and toast or broil again until the cheese begins to melt.
- Layer on the cooked smoked sausage, arugula, roasted red peppers, a drizzle of extra aioli, and the top piece of bread. Serve warm.
