#25 in my '100 30 Minute Meals' series is this Smoked Sausage Sandwich. Made with browned smoked sausage, garlic butter toasted bread, a creamy pesto aioli, and melty mozzarella, topped with arugula, and roasted red peppers.

Key Ingredients:

  • Smoked Sausage: Store-bought smoked sausage is sliced in half and cooked until browned on both sides. Use beef, pork, or turkey sausage.
  • Bread: Use your favorite sliced bread or rolls.
  • Garlic Butter: A mix of softened butter, minced garlic, and Italian seasoning. Blended together and swiped across the bread before toasting.
  • Pesto Aioli: A blend of mayo and pesto to top everything off.
  • Other Toppings: Fresh mozzarella cheese, peppery arugula, and sliced roasted red peppers.

Dietary Swaps:

  • Gluten-Free: Use your favorite gluten free bread and ensure all other ingredients are labeled gluten-free. For this recipe I used the Schar's Ciabatta bread.
  • Vegetarian: Replace the smoked sausage with a plant-based substitute. Cook fully before slicing. Or replace sausage with a blend of sauteed veggies.

Smoked Sausage Sandwich

Made with browned smoked sausage, garlic butter toasted bread, a creamy pesto aioli, and melty mozzarella, topped with arugula, and roasted red peppers.

Ingredients
  

Garlic Butter:

  • 2 tablespoon butter
  • 1 teaspoon finely minced garlic
  • ½ teaspoon Italian seasoning

Pesto Aioli:

  • 2 tablespoon mayo
  • ½ -1 tablespoon pesto

Sandwich:

  • 4 slices bread or 2 rolls halved
  • 2 smoked sausage links beef, pork, or turkey
  • 4 slices fresh mozzarella more or less as needed
  • ½ cup arugula
  • ¼ cup roasted red peppers sliced

Instructions
 

  • Microwave butter and garlic 5-10 seconds until softened. Stir in Italian seasoning; set aside.
  • Mix mayo with ½ tablespoon pesto. Taste and adjust with more pesto if desired.
  • Heat a frying pan with a little oil over medium-high. Slice sausage links in half lengthwise and cook a few minutes per side until browned.
  • Spread garlic butter on the cut sides of the bread. Toast in the skillet until edges are crisp.
  • Spread pesto aioli on the bottom piece of bread. Add mozzarella slices and toast or broil again until the cheese begins to melt.
  • Layer on the cooked smoked sausage, arugula, roasted red peppers, a drizzle of extra aioli, and the top piece of bread. Serve warm.
