Why You'll Love this Tomato Avocado Toast:

  • Quick & Easy: Ready in about 10 minutes with just a handful of simple ingredients.
  • Fresh & Flavorful: Don't let the simple ingredients fool you!
  • Higher-Protein & Nutrient-Dense: With a boost of vitamin C from the tomato and extra protein from cottage cheese, it's more filling than typical avocado toast.

Key Ingredients:

  • Toast: Any bread works here! Sourdough, whole grain, or gluten-free. Just be sure to choose something sturdy enough to hold the toppings.
  • Butter: Just a little spread on the warm toast for extra flavor.
  • Avocado: Mashed ripe avocado adds creaminess and healthy fats. Mash it smooth or leave it a little chunky.
  • Cottage Cheese: Adds a cool, creamy contrast and a boost of protein.
  • Tomato: Juicy and slightly acidic.
  • Toppings: A drizzle of extra virgin olive oil, a sprinkle of salt and pepper, and fresh basil leaves to finish it all off.

Dietary Swaps:

  • Gluten-Free: Use your favorite gluten-free bread. I really like the Schar's Deli-Style Gluten-Free Bread. It tastes very similar to sourdough and can be found at Walmart!
  • Dairy-Free/Vegan: Swap cottage cheese and butter for dairy-free alternatives like almond-based cream cheese (Kite Hill is a good brand).
  • Low Carb / Keto: Use keto-friendly bread (like low-carb cloud bread) to keep this recipe high fat and low carb.
  • Low FODMAP: Use lactose-free cottage cheese (Good Culture makes one!) and gluten-free bread.

Recipe Variations:

  • Mix Mashed Avocado and Cottage Cheese together (instead of layering them separately) for an extra creamy, protein-rich spread.
  • Put an Egg on It: Top your toast with a runny fried egg.
  • Spice it Up: Sprinkle red pepper flakes or drizzle some sriracha on top for heat.

FAQs:

What can I use instead of cottage cheese?

Ricotta cheese, cream cheese, or even goat cheese all work really well for this recipe.

How do I keep my mashed avocado from browning?

Store any leftover mashed avocado with a drizzle of lime juice over the top. Cover tightly with plastic wrap to minimize air exposure.
