Smoked Sausage Sandwich
Made with browned smoked sausage, garlic butter toasted bread, a creamy pesto aioli, and melty mozzarella, topped with arugula, and roasted red peppers.

Garlic Butter: 2 tablespoon butter 1 teaspoon finely minced garlic ½ teaspoon Italian seasoning Pesto Aioli: 2 tablespoon mayo ½ –1 tablespoon pesto Sandwich: 4 slices bread or 2 rolls halved 2 smoked sausage links beef, pork, or turkey 4 slices fresh mozzarella more or less as needed ½ cup arugula ¼ cup roasted red peppers sliced
Microwave butter and garlic 5–10 seconds until softened. Stir in Italian seasoning; set aside.
Mix mayo with ½ tablespoon pesto. Taste and adjust with more pesto if desired.
Heat a frying pan with a little oil over medium-high. Slice sausage links in half lengthwise and cook a few minutes per side until browned.
Spread garlic butter on the cut sides of the bread. Toast in the skillet until edges are crisp.
Spread pesto aioli on the bottom piece of bread. Add mozzarella slices and toast or broil again until the cheese begins to melt.
Layer on the cooked smoked sausage, arugula, roasted red peppers, a drizzle of extra aioli, and the top piece of bread. Serve warm.
Slice sausage lengthwise so it lays flat on the sandwich.
Taste aioli and adjust according to taste before spreading it on the sandwich.
This sandwich is best eaten fresh.
