Bacon & Egg Grilled Cheese

Starting off a new series of '100 30 minute meals' with this Bacon Egg and Cheese Grilled Cheese. Made with crispy thick cut bacon, eggs cooked in bacon fat, and melty cheddar cheese all in between 2 slices of butter toasted bread.

Key Ingredients:

  • Your Favorite Bread: For this recipe, I used a croissant, but you can use whatever bread you like. White bread, brioche, even sourdough all work.
  • Thick Cut Bacon: Crispy, crunchy, and savory.
  • Eggs: Fried or scrambled in a touch of bacon fat for extra flavor.
  • Cheese: I like to use sharp cheddar cheese, but any cheese with a good melt will work.
  • Mayo & Butter: I know it sounds weird to put mayo on a grilled cheese, but I promise, it works. The high fat content in butter and mayo helps achieve that perfect golden brown crust.

Dietary Swaps:

  • Gluten-Free: Use your favorite gluten-free bread and double check that all store brought ingredients are certified gluten-free.
  • Dairy-Free: Swap cheese, butter, and mayo for dairy-free versions, such as dairy-free margarine and Veganaise.
  • Egg-Free: Swap eggs for a vegan egg substitute such as JUST Eggs Made from Plants or Follow Your Heart Vegan Eggs.
  • Vegetarian: Omit the bacon or swap it for a plant-based bacon or breakfast sausage.

Recipe Variations:

  • Make it Sweet & Savory, by using a sweet bread such as brioche or honey challah.
  • Try a different kind of cheese. Muenster, pepperjack, American cheese, or even dill havarti.
  • Add some veggies. Sauteed mushrooms, onions, garlic, or spinach. Even a slice of tomato or avocado.
  • Extra Flavor Ideas: A few dashes of hot sauce, a spread of yum yum sauce (I promise it's so good), garlic mayo, a patty of breakfast sausage.

Tips & Notes:

  • Drain the bacon on a paper towel lined plate to remove excess grease.
  • Spread a bit of mayo on the outside and inside of the bread. This adds flavor and helps the sandwich achieve a crispy golden exterior.
  • Use medium heat when grilling the sandwich. Too hot and the bread will burn before the cheese melts.

FAQs:

What kind of fat should I grill the sandwich in?

I like to use a mixture of butter and mayo, but there are quite a few options. Just butter or just mayo, bacon fat, olive oil, a blend of olive oil & butter, even coconut oil all work really well and produce a slightly different golden exterior.

Can these sandwiches be frozen?

Yes! Assemble the sandwich full, but don't grill it. Wrap each sandwich in tightly in parchment paper, then foil, and place it is a freezer bag, pressing out any air. Freeze for up to 2 months.

When ready to eat, thaw in the microwave or in the fridge overnight, then cook in a skillet over medium heat until melty and golden.

Note: Scrambled eggs freeze better than fried!

Bacon & Egg Grilled Cheese

Made with crispy thick cut bacon, eggs cooked in bacon fat, and melty cheddar cheese all in between 2 slices of butter toasted bread.

Ingredients
  

  • 2 strips bacon
  • 2 large eggs
  • 2-3 slices cheese cheddar or American
  • 1 ½ teaspoon mayonnaise
  • ½ teaspoon butter
  • 2 slices bread croissant, white bread, brioche, or your favorite

Instructions
 

  • Cook Bacon: In a skillet over medium-high heat, cook bacon 3-4 minutes per side until crispy. Transfer to a paper towel-lined plate to drain.
  • Cook Eggs: Drain most of the bacon grease, leaving a thin layer. Cook eggs to your liking (fried or scrambled). Set eggs aside and wipe out the pan.
  • Assemble Sandwich: Spread a bit of mayonnaise on all sides of bread slices. In the pan, melt butter over medium heat. Layer 1 slice of bread, then half of cheese, cooked eggs, cooked bacon, more cheese, top slice of bread.
  • Grill: Cook sandwich, pressing gently with a spatula, 3-4 minutes per side until bread is golden and cheese is melted.
  • Transfer to a plate and enjoy!
