Bacon & Egg Grilled Cheese
Ingredients
- 2 strips bacon
- 2 large eggs
- 2-3 slices cheese cheddar or American
- 1 ½ teaspoon mayonnaise
- ½ teaspoon butter
- 2 slices bread croissant, white bread, brioche, or your favorite
Instructions
- Cook Bacon: In a skillet over medium-high heat, cook bacon 3-4 minutes per side until crispy. Transfer to a paper towel-lined plate to drain.
- Cook Eggs: Drain most of the bacon grease, leaving a thin layer. Cook eggs to your liking (fried or scrambled). Set eggs aside and wipe out the pan.
- Assemble Sandwich: Spread a bit of mayonnaise on all sides of bread slices. In the pan, melt butter over medium heat. Layer 1 slice of bread, then half of cheese, cooked eggs, cooked bacon, more cheese, top slice of bread.
- Grill: Cook sandwich, pressing gently with a spatula, 3-4 minutes per side until bread is golden and cheese is melted.
- Transfer to a plate and enjoy!
