#8 in my '100 30 minute meals' series is this ultra-comforting Sourdough Grilled Cheese Sandwich. Made with crisp, golden sourdough bread and gooey, melty cheese.

Key Ingredients:

  • Sourdough Bread: Tangy and sturdy, sourdough bread becomes golden and crisp.
  • Mayo: Helps create the golden, crispy crust.
  • Cheese: Shredded straight from the block or slices. Use your favorite cheese with a good melt such as American, cheddar, or provolone.

Dietary Swaps:

  • Gluten-Free: Use a gluten-free sourdough style bread such as Schar's Gluten-Free Sourdough Deli Style Bread.
  • Dairy-Free: Use a dairy-free mayo & dairy-free cheese such as Daiya.
  • Egg-Free: Use an egg-free mayo such as Vegeniase.

Recipe Variations:

  • Optional additions: pickle relish or pickle slices, tomato slices, cooked bacon.
  • Try a blend of cheeses. Gruyere, white cheddar, provolone, or muenster are all good choices.
  • Make it spicy, with pepperjack cheese and sliced pickled jalapenos.

  • Shred cheese straight from the block. Pre-shredded cheese is often coated in anti-caking agent that makes it not melt as well.
  • Mayo can be swapped for melted butter or butter spread.
  • Covering the pan with a lid traps steam and can help the cheese melt faster without burning the bread.

Sourdough Grilled Cheese Sandwich

Made with crisp, golden sourdough bread and gooey, melty cheese.

Ingredients
  

  • 2 large slices sourdough bread
  • 1 tablespoon mayonnaise
  • 1 cup shredded cheese shredded from the block or 4-6 slices
  • (Optional Additions) pickle relish, tomato slices, cripsy bacon slices

Instructions
 

  • Heat a frying pan over medium heat.
  • Spread mayonnaise onto the outside of each bread slice.
  • Place one slice of bread mayo-side down in the frying pan.
  • Top with shredded cheese (and any toppings if using), then add the second slice of bread, mayo-side up.
  • Cook 3-4 minutes per side, or until the bread is golden brown and crispy and the cheese has melted.
  • Slice in half and serve immediately.
