Garlic Olive Oil Bread Dip

Let me tell ya about one of my favorite snacks, bread dipped in olive oil with a bit of seasoning. It's simple, but almost as good as buttered toast. Add some garlic in and...holy moly! This Garlic Olive Oil Bread Dip is made with quality extra virgin olive oil, herbs, and whole garlic cloves roasted until they are buttery soft. It's a simple recipe that's simply delicious.

Key Ingredients:

  • Garlic: Roasted whole until soft and buttery. Roasting garlic cuts that sharpness and gives it a subtly sweet flavor.
  • Extra Virgin Olive Oil: The base of the recipe. It's very important to a choose a good quality oil for this recipe.
  • Herbs & Spices: A blend of fresh Mediterranean herbs and spices such as dill, oregano, marjoram, and a bit of onion powder.
  • Salt & Pepper: If you can, use a sprinkle of kosher or flaky salt, and fresh cracker pepper.
  • Crusty Bread: For spreading and dipping.

Dietary Swaps:

  • This recipe is naturally dairy-free & vegan.
  • Gluten-Free: The dip itself is naturally gluten-free, just serve with your favorite gluten-free bread. Since it's can be difficult to find gluten-free crusty bread, you can toast your bread a bit before serving to give it some texture.
  • Low-Carb/Keto: The dip is naturally keto as written, just serve with a keto-friendly pita or flatbread.

Recipe Variations:

  • Try different herbs & seasonings, such as fresh rosemary, thyme, basil, garlic powder, or lemon pepper.
  • Add some spice with red pepper flakes, chili oil, or harissa.
  • Add a splash of lemon juice to brighten up this dip.

Tips & Storage:

  • Cut the tops off of the garlic bulbs before roasting for easier peeling. This also exposes the individual cloves and helps them caramelize more quickly.
  • Adjust the roasting time according to the size of the garlic bulb. Smaller ones may only need 30ish minutes while larger ones, closer to 45 minutes.
  • Use a high quality extra virgin olive oil for this recipe. Since it is the base of this recipe, the quality and flavor of the oil matter here.
  • Store any leftovers in an airtight container for up to a week in the refrigerator. The oil will solidify in the refrigerator, so warm it over low on the stove top or in the microwave for 10 second intervals to restore it's liquid texture.

Garlic Olive Oil Bread Dip

Ingredients
  

  • 2 whole heads garlic
  • ½ cup extra virgin olive oil + 2 tbsp
  • ½ teaspoon fresh dill finely chopped
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried marjoram
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Crusty bread for serving

Instructions
 

  • Roast garlic at 400°F for 35-40 minutes until golden and tender. Peel cloves.
  • In a serving bowl, whisk olive oil with herbs, onion powder, salt, and pepper.
  • Add roasted garlic cloves, garnish with dill, and serve with bread.
