Roast garlic at 400°F for 35–40 minutes until golden and tender. Peel cloves.
In a serving bowl, whisk olive oil with herbs, onion powder, salt, and pepper.
Add roasted garlic cloves, garnish with dill, and serve with bread.
Notes
Cut the tops off of the garlic bulbs before roasting for easier peeling and caramelization.
Adjust the roasting time according to the size of the garlic bulb. Smaller ones may only need 30ish minutes while larger ones, closer to 45 minutes.
Use a high quality extra virgin olive oil for this recipe. Since it is the base of this recipe, the quality and flavor of the oil matter here.
Store any leftovers in an airtight container for up to a week in the refrigerator. The oil will solidify in the refrigerator, so warm it over low on the stove top or in the microwave for 10 second intervals to restore it's liquid texture.
