Garlic Olive Oil Bread Dip

Made with quality extra virgin olive oil, herbs, and whole garlic cloves roasted until they are buttery soft. Served with crusty bread.

Ingredients
  

  • 2 whole heads garlic
  • ½ cup extra virgin olive oil + 2 tbsp
  • ½ teaspoon fresh dill finely chopped
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried marjoram
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Crusty bread for serving

Instructions
 

  • Roast garlic at 400°F for 35–40 minutes until golden and tender. Peel cloves.
  • In a serving bowl, whisk olive oil with herbs, onion powder, salt, and pepper.
  • Add roasted garlic cloves, garnish with dill, and serve with bread.

Notes

  • Cut the tops off of the garlic bulbs before roasting for easier peeling and caramelization.
  • Adjust the roasting time according to the size of the garlic bulb. Smaller ones may only need 30ish minutes while larger ones, closer to 45 minutes.
  • Use a high quality extra virgin olive oil for this recipe. Since it is the base of this recipe, the quality and flavor of the oil matter here.
  • Store any leftovers in an airtight container for up to a week in the refrigerator. The oil will solidify in the refrigerator, so warm it over low on the stove top or in the microwave for 10 second intervals to restore it's liquid texture.
