Roast Beef Sandwich with Horseradish Sauce

#30 in my '100 30 Minute Meals' series is this Roast Beef Sandwich. Made with a garlicky horseradish sauce, sliced roast beef, melty provolone, arugula, sliced red onion, and roasted red pepper on a crunchy french baguette.

Key Ingredients:

  • Bread: For this recipe I used a large french baguette, but this sandwich is great on any bread! Sliced sourdough, ciabatta, or even focaccia are all great choices.
  • Roast Beef: Sliced roast beef from your local deli or grocery store.
  • Provolone Cheese: A mild creamy cheese that melts easily.
  • Veggies: Peppery arugula, sliced red onions, and jarred roasted red bell pepper cut into slices.
  • Horseradish Sauce: An easy blend of mayo, creamed horseradish, dijon mustard, and minced garlic.

Dietary Swaps:

  • Gluten-Free: Use your favorite gluten free bread. For this recipe I used the Udi's French Baguette that can often be found in the freezer section of the grocery store. Double check that roast beef is gluten free as well as some use fillers, sauces, or rubs.
  • Dairy-Free: Omit the cheese and use a vegan mayo and horseradish.
  • Vegetarian: Swap the roast beef with a plant-based meat (this would be great with Impossible Meatballs!) or sauteed veggies/mushrooms.
  • Low Carb/ Keto: Omit the bread and use a low carb tortilla to make this a wrap or turn this recipe into a salad bowl.

Recipe Variations:

  • Swap the Cheese. White cheddar, pepper jack, havarti, or fresh mozzarella would all work really well.
  • Add Extra Veggies. Roasted zucchini, sauteed mushrooms, or thinly sliced cucumber are great options.

Tips & Recipe Notes:

  • As far as bread goes, for this recipe I used a large gluten free french baguette, but you can use whatever sounds good to you. Sliced sourdough, ciabatta, or even a sweeter bread like challah would work really well.
  • Use freshly sliced roast beef from your local deli or grocery store rather than pre-packaged if possible. Packaged roast beef is often covered in stabilizers and preservatives that can give it an odd texture and taste.

Roast Beef Sandwich with Horseradish Sauce

Made with a garlicky horseradish sauce, sliced roast beef, melty provolone, arugula, sliced red onion, and roasted red pepper on a crunchy french baguette.

Ingredients
  

Garlic Horseradish Sauce:

  • 2 tablespoon mayonnaise
  • 1 teaspoon minced garlic
  • 1 teaspoon Dijon mustard
  • 1 teaspoon creamed horseradish

Sandwich:

  • 1 large baguette cut lengthwise
  • ½ lb sliced roast beef
  • 4-6 slices provolone cheese
  • A few handfuls arugula
  • ¼ red onion thinly sliced
  • ¼-½ cup roasted red peppers

Instructions
 

  • Mix mayonnaise, garlic, Dijon mustard, and horseradish. Adjust to taste.
  • Cut baguette lengthwise and spread sauce on both sides.
  • Fold roast beef and place on the bottom half of the bread. Top with provolone slices.
  • Broil or toast until cheese melts.
  • Layer arugula, red onion, and roasted red peppers. Add more sauce if desired, close the sandwich, slice, and serve.
