Cheesy Mushroom Toast

This Cheesy Mushroom Toast is one I make all the time. It's rich, melty, packed with savory, umami flavor, and so, so easy to make. Crusty bread layered with provolone, garlicky sautéed mushrooms, topped with Italian cheese, then broiled till bubbly. Perfect for a cozy snack, lazy brunch, or quick dinner (especially with a glass of wine).

Key Ingredients:

  • Butter: Salted or unsalted, used to saute the mushrooms for extra flavor.
  • Baby Bella Mushrooms: Also called cremini mushrooms. They have a slightly deeper, earthier flavor than white mushrooms.
  • Garlic, White Wine, Worcestershire Sauce, & Fresh Thyme: Added the the mushrooms to add depth and complexity. White wine adds a bit of acidity to balance the flavors, but it can be omitted if needed.
  • Crusty Bread: A sturdy crusty bread, toasted to hold up to the toppings.
  • Provolone & Italian Cheese: Cheeses under and on top of the mushrooms, melted until bubbly and golden.

Dietary Swaps:

  • To Make it Gluten-Free: Swap out the regular crusty bread for your favorite gluten-free bread. For this recipe I used Schär's Gluten-Free Deli Style Bread, which worked great, is a nice size, and is very reminiscent of sourdough.
  • To Make it Dairy-Free/Vegan: Swap the butter and cheeses for dairy-free versions. For the cheese pick something that melts well such as Daiya or VioLife Mozzarella Shreds.

  1. Saute the mushrooms, until tender. Add the garlic, thyme, Worcestershire sauce, and white wine (if using).
  2. Toast the bread until crispy and golden.
  3. Melt the provolone onto to the toast with a broiler.
  4. Add the sauteed mushrooms to the toast and top with shredded Italian cheese. Broil again until melty.

Tips:

  • Keep on eye on the toast while broiling. The cheese can quickly go from melty to burnt!
  • Use a damp paper towel to clean the mushrooms before slicing and sauteing.

Storage:

  • Store leftover sauteed mushrooms in an airtight container in the fridge for up to 2 days. When ready for toast, reheat the mushrooms and assemble the toast fresh to keep the bread from becoming stale or soggy.

Can I use other types of mushrooms?

For sure! Use your favorite type of mushroom for this toast recipe.

Is this recipe vegetarian?

Yes! Just make sure to use a vegetarian-friendly Worcestershire sauce (some brands contain anchovies), or substitute with soy sauce.

Can I skip the wine?

Of course! The white wine adds a bit of acidity and complexity to the mushrooms, but this recipe is still great without it.

Cheesy Mushroom Toast

Ingredients
  

For the Mushroom Topping:

  • 1½ tablespoon butter salted or unsalted
  • 8 oz baby bella mushrooms cleaned & sliced
  • 1 tablespoon garlic minced
  • 1- 2 tablespoon dry white wine optional
  • ½ teaspoon fresh thyme leaves
  • ¼-½ tsp Worcestershire sauce
  • Salt & pepper to taste

For the Toast:

  • 2 slices rustic crusty bread like sourdough
  • 4 slices provolone cheese
  • ¼ cup shredded Italian cheese blend

Instructions
 

  • Cook the Mushrooms: In a skillet, melt the butter over medium heat. Add the sliced mushrooms and sauté for 6-7 minutes, until browned and tender.
  • Add Flavor: Stir in the garlic, thyme, white wine, and Worcestershire sauce. Let simmer for 2-3 minutes until the liquid is mostly reduced. Season with salt and pepper to taste. Remove from heat.
  • Toast the Bread: Lightly toast the bread slices under the broiler or in a toaster oven.
  • Assemble & Broil: Place two slices of provolone on each piece of toast. Broil for 1-2 minutes, until melted and bubbly.
  • Add Mushrooms & Finish: Spoon half the mushroom mixture over each toast. Top with shredded Italian cheese and return to the broiler for another 1-2 minutes, until golden and melty.
  • Serve Hot: Enjoy immediately while the cheese is gooey and the toast is crisp!
