Lohikeitto, the absolutely delicious salmon soup recipe that is popular in Nordic countries. It’s dilly, creamy, buttery and has huge chunks of salmon and hearty vegetables. Not only does it taste amazing but it also comes together in just 30 minutes.
- Servings– 8 cups

Lohikeitto Salmon Soup Ingredients:
- Salmon Fillets– skins removed and meat cut into bite-sized cubes.
- Good Salted Butter– be sure to use a high quality butter. You can use unsalted, but I think salted really adds to the flavor for this one.
- Shallots
- Garlic– minced
- Stock-seafood or chicken
- Carrots
- Red Potatoes
- Cream– heavy cream or half and half work best for this for flavor and are less likely to curdle in the heat of the soup.
- Fresh Dill
- Salt & Pepper
Salmon Soup Serving Suggestions:
- Lohikeitto is very filling and makes a fantastic dinner on it’s own.
- Try serving it with crusty bread and a simple side salad.
Substitutions and Variations:
- Instead of shallots, try finely diced red onion.
- Instead of salmon, try a white fish such as cod.

How to Make Salmon Soup:
- Prepare Ingredients– skin and cube salmon, slice carrots, mince garlic and shallots, and dice potatoes.
- Simmer Broth & Vegetables– Over medium heat, melt butter in a large stock pot. Add minced garlic & minced shallots, cook and stir frequently for 1-2 minutes until fragrant. Add potatoes, carrots, and salt and pepper to pot. Give everything a stir and pour in seafood or chicken stock. Turn heat to high and bring stock pot to a boil. Cover with lid and simmer for 12-16 minutes, until vegetables begin to soften.
- Add Salmon & Cream– Remove lid from pot and turn heat down to medium-low. Add salmon chunks & cream to soup. Stir and simmer uncovered for 5 minutes longer.
- Add Dill & Plate: Remove stock pot from heat. Stir in chopped dill, re-cover with lid, and allow to sit undisturbed for 5-10 minutes more. Ladle soup into bowl, and top with a bit of pepper. Enjoy!

- 6 tbsp salted butter
- 2 tbsp shallot
- 2 tbsp minced garlic
- 5 cups stock seafood or chicken
