Close up shredded and fried slow cooker pork carnitas and fresh herbs.

Ingredients Notes:

  • Toasted Bread– toasted bread holds it’s structure better when exposed to sauce and other ingredients with a lot of moisture. Toasted Sourdough or even Sweet Hawaiian work great for this recipe.
  • Carnitas or Pulled Pork– for this you have a lot of options. You could grab some to-go from a BBQ restaurant or most grocery stores will have pulled pork pre-made in the deli or freezer section. • Ham– thick-cut deli ham or thick-cut country ham for added saltiness.
  • Swiss Cheese
  • Dill Pickle Relish
  • Mustard Cream Sauce– very similar to hollandaise sauce in texture, and adds a subtle bright acidity to the overall dish.

Substitutions & Variations:

  • For a bit of spice, try adding Tabasco sauce, cayenne pepper, or creamed horseradish.
  • For a more classic eggs benedict, check out this article on how to poach an egg from Downshiftology.
  • Scrambled eggs also work well for this!
  • Other great additions: slice of tomato, sliced avocado, or thinly sliced red onion.

Tips & Recipe Notes:

  • The mustard cream sauce tastes quite strong on it’s own, but mellows out when combined with the other ingredients. Add more mustard for a stronger flavor.
  • If using English muffins, split each serving between two muffin halves and make an extra egg.
  • If buying pre-made or frozen pulled pork, look for an unsauced or sauce on the side version.

Ingredients

  • 2 cups carnitas or pulled pork
  • 4 large slices bread toasted
  • 4 slices Swiss cheese
  • 4 slices thick-cut ham
  • 1 tbsp butter
  • 4 eggs
  • 2 tbsp pickle relish

For Mustard Cream Sauce:

  • 1 tbsp salted butter
  • 1 tbsp shallot finely minced
  • 1/2 tsp garlic minced
  • 1 tsp all-purpose flour
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tbsp yellow mustard
  • Salt & pepper to taste

Instructions

Make Mustard Cream Sauce:

  • In a medium sauce pan, melt 1 tbsp butter over med-low heat. Once melted, add finely minced shallot and minced garlic. Cook, stirring often, for 1-2 minutes until fragrant.
  • Sprinkle in flour and stir until fully combined and no lumps of flour remain. Slowly whisk in heavy cream, 1/2 cup at a time.
  • Turn heat to low and whisk continuously until sauce has thickened, about 4-7 minutes. The texture of the sauce should be thick, but still smooth and pour-able (similar to hollandaise).
  • Once desired texture is reached, remove pan from heat and whisk in Dijon mustard and yellow mustard. Add salt & pepper to taste

Fry Eggs:

  • Heat a frying over medium heat. Add 1 tbsp of butter and melt.
  • Once melted, add eggs, careful not to break the yolks. Sprinkle eggs with a touch of salt and pepper, cover pan, and let eggs cook for about 2 minutes until the whites have fully set but the yolks are still runny. Remove from heat.

Construct:

  • Lay 4 pieces of toasted bread on a baking sheet and top each one with a slice of Swiss cheese. Place baking sheet underneath a broiler until the cheese has melted.
  • Top each toasted cheesy bread with pickle relish, slice of ham, carnitas or pulled pork, fried egg, and finally mustard cream sauce. Enjoy!
