Mashed Potato Bowls
Inspired by the KFC version, these Mashed Potato Bowls are total comfort food. Made with buttery mashed potatoes, sweet corn, crispy popcorn chicken, brown gravy, and shredded cheddar cheese.
Ingredients
- 4 cups mashed potatoes homemade or 1 family-size packet of instant potatoes
- 2-3 tbsp butter and cream optional, for richer, creamier potatoes
- 16 oz can corn drained
- 4 cups popcorn chicken
- 2 cups brown gravy homemade or 1 packet, prepared
- ½ cup finely grated cheddar cheese
Instructions
- Prepare the mashed potatoes. For extra flavor and creaminess, mix in butter and cream.
- Cook the popcorn chicken according to the package directions.
- Warm the corn and prepare the gravy.
- Divide the mashed potatoes into four bowls.
- Top each with corn, popcorn chicken, gravy, and a sprinkle of cheddar cheese.
