Mashed Potato Bowls

Inspired by the KFC version, these Mashed Potato Bowls are total comfort food. Made with buttery mashed potatoes, sweet corn, crispy popcorn chicken, brown gravy, and shredded cheddar cheese.

Key Ingredients:

  • Mashed Potatoes: Use homemade, instant, or refrigerated store-bought. Add a bit of butter and cream for smoother texture & richness.
  • Popcorn Chicken: To make this recipe quick & easy, use frozen popcorn chicken. Heat up in the oven or air-fryer for extra crispiness.
  • Toppings: Brown gravy, sweet can corn, and grated cheddar cheese.

Dietary Swaps:

  • Dairy-Free: Omit or use a dairy-free substitute for the cream, butter, and grated cheese topping.
  • Gluten-Free: Use gluten-free chopped chicken tenders or nuggets (I love the Perdue version, made with rice flour!) and gluten-free brown gravy. Double check the labels of all other store-bought ingredients as well.
  • Vegetarian: Swap popcorn chicken for plant-based chicken nuggets.

  • Make it Beefy: Swap popcorn chicken for browned ground beef or Salisbury steaks.

Mashed Potato Bowls

Ingredients
  

  • 4 cups mashed potatoes homemade or 1 family-size packet of instant potatoes
  • 2-3 tbsp butter and cream optional, for richer, creamier potatoes
  • 16 oz can corn drained
  • 4 cups popcorn chicken
  • 2 cups brown gravy homemade or 1 packet, prepared
  • ½ cup finely grated cheddar cheese

Instructions
 

  • Prepare the mashed potatoes. For extra flavor and creaminess, mix in butter and cream.
  • Cook the popcorn chicken according to the package directions.
  • Warm the corn and prepare the gravy.
  • Divide the mashed potatoes into four bowls.
  • Top each with corn, popcorn chicken, gravy, and a sprinkle of cheddar cheese.
  • Serve hot and enjoy!
