Instructions
Cook Bacon: In a skillet over medium-high heat, cook bacon 3–4 minutes per side until crispy. Transfer to a paper towel–lined plate to drain.
Cook Eggs: Drain most of the bacon grease, leaving a thin layer. Cook eggs to your liking (fried or scrambled). Set eggs aside and wipe out the pan.
Assemble Sandwich: Spread a bit of mayonnaise on all sides of bread slices. In the pan, melt butter over medium heat. Layer 1 slice of bread, then half of cheese, cooked eggs, cooked bacon, more cheese, top slice of bread.
Grill: Cook sandwich, pressing gently with a spatula, 3–4 minutes per side until bread is golden and cheese is melted.
Transfer to a plate and enjoy!
Notes
Drain the bacon on a paper towel lined plate to remove excess grease.
Spread a bit of mayo on the outside and inside of the bread. This adds flavor and helps the sandwich achieve a crispy golden exterior.
Use medium heat when grilling the sandwich. Too hot and the bread will burn before the cheese melts.
