How to Cook Amy's Roasted Poblano Enchilada
There are a few different ways to prepare this meal, including the microwave, oven, or toaster oven.
I decided to use the microwave since I imagine that's how most people will prepare it when they're looking for a quick meal.

I microwaved it for 4 ½ minutes, following the package instructions, and then let it sit for another minute or two before eating.
The entire process was quick and easy, with very little effort required.
Taste Test
I'll be honest. This meal isn't exactly the most appetizing thing to look at straight out of the package.
There are two small enchiladas covered in a pale green sauce, and the tofu and carrot filling inside looks a little bit like...well, vomit.

Not exactly the best first impression.
Thankfully, things improved considerably once I cooked it.
As soon as it came out of the microwave, it smelled really good. The smell was enough to keep me intrigued despite the questionable appearance, and I'm very glad I gave it a chance because it actually tasted really nice.
The roasted poblano sauce is creamy and fairly light, with a noticeable but mild poblano flavor. I wouldn't describe it as spicy at all, which is worth mentioning because I'm very sensitive to heat and spice.

To me, roasted poblano has a flavor that's similar to a slightly bolder bell pepper, and that's exactly what I get here.
The corn tortillas were tender without becoming completely mushy, and the filling was surprisingly pleasant. There were small pieces of soft tofu, carrot, and zucchini throughout, along with a light garlic flavor.
The tofu didn't have a particularly strong flavor of its own, which I actually think works well here. It mostly adds texture and helps give the filling some substance.

And just to clarify, despite what you might expect from the name, this isn't an enchilada plate with rice and beans on the side. There are no rice or beans in this meal, and the enchiladas themselves aren't covered in a ton of melted cheese. The creamy poblano sauce is really the star of the dish.
Visually, it looks fairly similar to the photo on the package, although the actual meal is less vivid and a little messier. Honestly, that's to be expected with a frozen meal.
Overall, I found the flavor and texture really enjoyable.

Final Thoughts
I really enjoyed this meal and will definitely be purchasing it again to keep in the freezer for a quick meal.
The flavor was light and really pleasant, and two enchiladas ended up being just enough for me for a small meal. The roasted poblano sauce was probably my favorite part. It was creamy, flavorful, and mild enough that even I didn't find it spicy.
Even the tofu and vegetable filling, which admittedly wasn't the most visually appealing, had a really nice flavor and texture.
And I have to admit, I found myself scraping the container to get the last bits of that poblano sauce out.
At $6.22 per package, this is a little more expensive than some other frozen meals, but I still found it filling and enjoyable enough that I think the extra cost is worth it for the convenience and gluten-free, organic ingredients.
After some of the other frozen meals I've tried recently, it was nice to find one that actually made me want to clean out the container.
