Tater Tot Casserole

This Tater Tot Casserole is made with ground beef, cream of mushroom soup, and green beans tops with tater tots and plenty of cheddar cheese.

Ingredient Notes:

  • Ground Beef: I like using lean ground beef so the casserole doesn't end up too greasy.
  • Cheddar Cheese: Freshly shredding a block gives you a much better melt than pre-shredded cheese.

Dietary Swaps:

  • Gluten-Free: Use gluten-free cream of mushroom soup and check the tater tot packaging to make sure they're gluten-free.
  • Vegetarian: Swap the ground beef for a plant-based ground beef alternative.
  • Worcestershire Sauce Substitute: If you don't have Worcestershire sauce, you can use a small splash of soy sauce or coconut aminos instead.

Recipe Variations:

  • Add Extra Veggies: Such as sauteed mushrooms, English peas, or carrots.
  • Make it Extra Savory: By adding cooked bacon into the beef and cream of mushroom micture.
  • Swap beef for ground sausage, ground chicken, or ground turkey.

Other Notes:

  • Drain excess fat from cooked ground beef before combining with the other ingredients.
  • Let casserole sit for 5-10 minutes after baking to let it settle.
  • Store leftovers covered in the refrigerator for up to 4 days.

Ingredients
  

  • 1 tablespoon butter
  • ½ white or yellow onion diced
  • 1½ lb lean ground beef
  • 1 tablespoon minced garlic
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves
  • 1 10.5 oz can cream of mushroom soup
  • 1 15 oz can French cut green beans, drained
  • 8 oz block cheddar cheese freshly grated
  • 1 bag frozen tater tots
  • Salt & pepper to taste

Instructions
 

  • Preheat oven to 375°F and lightly grease a 9x13-inch baking dish.
  • In a large frying pan, melt butter over medium heat.
  • Add diced onion and cook for about 2 minutes.
  • Add ground beef and cook until the beef is browned and the onion is tender.
  • Drain any excess grease from the pan.
  • Add garlic, fresh thyme, Worcestershire sauce, and a sprinkle of salt and pepper. Cook for another 1-2 minutes.
  • Transfer the beef mixture to the prepared baking dish.
  • Add cream of mushroom soup and drained green beans. Stir everything together until evenly combined, then spread into an even layer.
  • Sprinkle half of the shredded cheddar over the beef mixture.
  • Arrange the frozen tater tots in an even layer over the cheese.
  • Sprinkle the remaining cheddar over the tater tots.
  • Bake for 35-40 minutes, until the tater tots are golden brown and crispy and the cheese is melted.
  • Let cool for a few minutes before serving.
