Ingredients
  

  • 1 lb Brussels sprouts
  • 4-6 strips thick-cut bacon cooked and crumbled
  • cup roasted pecans roughly chopped
  • ¼ cup crumbled Gorgonzola cheese
  • 1 avocado diced

For the Fig Balsamic Dressing:

  • ¼ cup fig jam
  • 2 tablespoons extra virgin olive oil
  • 1-2 teaspoons balsamic vinegar
  • Kosher salt to taste

Instructions
 

  • Using a mandoline, sharp knife, or food processor, thinly slice Brussels sprouts.
  • In a large mixing bowl, combine shaved Brussels sprouts, crumbled bacon, roasted pecans, Gorgonzola, and diced avocado.
  • In a small bowl, whisk together fig jam, olive oil, balsamic vinegar, and salt.
  • Pour dressing over salad and gently toss to combine. Serve immediately.

Notes

  • Dressing can be made ahead and refrigerated.
  • This salad is naturally gluten-free and can easily be made vegetarian and dairy-free.
