- 1 lb Brussels sprouts
- 4-6 strips thick-cut bacon cooked and crumbled
- ⅓ cup roasted pecans roughly chopped
- ¼ cup crumbled Gorgonzola cheese
- 1 avocado diced
For the Fig Balsamic Dressing:
- ¼ cup fig jam
- 2 tablespoons extra virgin olive oil
- 1-2 teaspoons balsamic vinegar
- Kosher salt to taste
Using a mandoline, sharp knife, or food processor, thinly slice Brussels sprouts.
In a large mixing bowl, combine shaved Brussels sprouts, crumbled bacon, roasted pecans, Gorgonzola, and diced avocado.
In a small bowl, whisk together fig jam, olive oil, balsamic vinegar, and salt.
Pour dressing over salad and gently toss to combine. Serve immediately.
