Mediterranean Grilled Cheese

#44 in my '100 30 Minute Meals' series is this Mediterranean Grilled Cheese. Melty mozzarella, tangy feta, roasted red peppers, banana peppers, and olives are layered between crispy golden bread, then finished with a cheesy crust on the outside.

  • Bread or Pita: A sturdy bread works best for holding all the fillings.

Mediterranean Grilled Cheese

Melty mozzarella, tangy feta, roasted red peppers, banana peppers, and olives are layered between crispy golden bread, then finished with a cheesy crust.

Ingredients
  

  • 1 tablespoon butter
  • 2 slices bread or 1 pita, split
  • ½ cup shredded mozzarella cheese
  • ¼ cup crumbled feta cheese
  • 1-2 tablespoon sliced roasted red peppers
  • 1-2 tablespoon sliced banana peppers
  • 1-2 tablespoon chopped olives

Instructions
 

  • Melt butter in a skillet over medium heat.
  • Add one slice of bread to the pan.
  • Layer with about one-third of the mozzarella cheese.
  • Add roasted red peppers, banana peppers, olives, and feta cheese.
  • Top with another one-third of the mozzarella and the second slice of bread.
  • Cook for 2-4 minutes per side until golden brown and the cheese begins to melt.
  • Sprinkle half of the remaining mozzarella directly into the skillet and place the sandwich on top.
  • Cook another 1-2 minutes until the cheese crisps onto the bread.
  • Repeat on the other side with the remaining mozzarella.
  • Slice and serve immediately.
