Mediterranean Grilled Cheese
Melty mozzarella, tangy feta, roasted red peppers, banana peppers, and olives are layered between crispy golden bread, then finished with a cheesy crust.
Ingredients
- 1 tablespoon butter
- 2 slices bread or 1 pita, split
- ½ cup shredded mozzarella cheese
- ¼ cup crumbled feta cheese
- 1-2 tablespoon sliced roasted red peppers
- 1-2 tablespoon sliced banana peppers
- 1-2 tablespoon chopped olives
Instructions
- Melt butter in a skillet over medium heat.
- Add one slice of bread to the pan.
- Layer with about one-third of the mozzarella cheese.
- Add roasted red peppers, banana peppers, olives, and feta cheese.
- Top with another one-third of the mozzarella and the second slice of bread.
- Cook for 2-4 minutes per side until golden brown and the cheese begins to melt.
- Sprinkle half of the remaining mozzarella directly into the skillet and place the sandwich on top.
- Cook another 1-2 minutes until the cheese crisps onto the bread.
- Repeat on the other side with the remaining mozzarella.
- Slice and serve immediately.
