This Sausage & Cabbage Gnocchi is made with browned sausage, pan fried gnocchi, sauteed cabbage and onions, garlic, fresh thyme, white wine, and broth.

A Few Ingredient Notes:

  • Ground Sausage: Use your favorite ground breakfast or Italian sausage. Italian sausage will give the dish a little more herb and spice flavor.
  • Gnocchi: A package of shelf-stable, refrigerated, or frozen potato gnocchi will work. Cooking times may vary depending on the type.
  • White Wine: A splash of dry white wine adds acidity and helps lift all those buttery, savory flavors.

Dietary Swaps:

  • Gluten-Free: Use certified gluten-free gnocchi and check that your sausage and chicken broth are gluten-free. Traditional potato gnocchi often contains wheat flour.
  • Dairy-Free: Replace the butter with olive oil or dairy-free butter. Check your gnocchi ingredients as well.
  • Vegetarian: Replace the sausage with plant-based sausage and use vegetable broth.

Tips & Recipe Notes:

  • Optional Additions: A splash of heavy cream, sliced mushrooms, grated Parmesan.
  • Don't overcrowd the pan. Give the gnocchi room to brown. If your skillet is small, cook it in batches.
  • Stir the gnocchi often. This helps it brown evenly without sticking or burning.
  • Watch your cooking time. Shelf-stable, refrigerated, and frozen gnocchi can all cook a little differently. You're looking for a softened center and lightly crisp exterior.
  • Let the cabbage soften. Give it the full 6-8 minutes so it becomes tender and slightly sweet.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of chicken broth. The gnocchi will lose some of its crispiness, but reheating in a pan helps bring back a little texture.

Ingredients

  • ½ pound ground sausage
  • 2 tablespoons butter divided
  • 1 package potato gnocchi about 16 ounces
  • ¼ head green cabbage thinly sliced
  • ¼ yellow onion diced
  • 1 tablespoon minced garlic
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons white wine
  • ½ cup chicken broth
  • Salt and black pepper to taste

Instructions

  • Heat a large skillet over medium heat. Add the ground sausage and cook until browned and cooked through, breaking it into small pieces as it cooks.
  • Transfer the sausage to a paper towel-lined plate and set aside.
  • Add 1 tablespoon of butter to the same skillet. Once melted, add the gnocchi in an even layer.
  • Cook for 8-15 minutes, stirring often, until the gnocchi is softened on the inside and lightly crispy on the outside. Cooking time will vary depending on the type of gnocchi. Remove from the skillet and set aside.
  • Add the remaining tablespoon of butter to the skillet.
  • Add the sliced cabbage and diced onion. Cook for 6-8 minutes, stirring occasionally, until the cabbage softens and the onion becomes translucent.
  • Add the minced garlic and fresh thyme. Cook for another minute.
  • Pour in the white wine and simmer for about 1 minute.
  • Add the chicken broth and simmer for a few minutes until the liquid has reduced slightly.
  • Return the cooked sausage and gnocchi to the skillet. Stir everything together and season with salt and black pepper to taste.
  • Cook for another few minutes until everything is warmed through and coated in the pan sauce.
  • Serve warm.
