Mediterranean Grilled Cheese

Ingredients
  

  • 1 tablespoon butter
  • 2 slices bread or 1 pita, split
  • ½ cup shredded mozzarella cheese
  • ¼ cup crumbled feta cheese
  • 1-2 tablespoon sliced roasted red peppers
  • 1-2 tablespoon sliced banana peppers
  • 1-2 tablespoon chopped olives

Instructions
 

  • Melt butter in a skillet over medium heat.
  • Add one slice of bread to the pan.
  • Layer with about one-third of the mozzarella cheese.
  • Add roasted red peppers, banana peppers, olives, and feta cheese.
  • Top with another one-third of the mozzarella and the second slice of bread.
  • Cook for 2–4 minutes per side until golden brown and the cheese begins to melt.
  • Sprinkle half of the remaining mozzarella directly into the skillet and place the sandwich on top.
  • Cook another 1–2 minutes until the cheese crisps onto the bread.
  • Repeat on the other side with the remaining mozzarella.
  • Slice and serve immediately.

Notes

  • Shred your own mozzarella from a block if possible for the best melt.
  • Pat roasted red peppers & banana peppers dry before adding them to prevent a soggy sandwich.
