Key Ingredients:

  • Ground Chicken Sausage: Savory & easy to cook. If bought in links, slice or remove casings.
  • Sun-Dried Tomatoes: Packed in oil, these tomatoes are soft, sweet, and slightly tart.
  • Garlic, Onions, Tomato Paste & White Wine: Build the flavor base of this pasta.
  • Heavy Cream & Grated Parmesan Cheese: To add creaminess & more savory flavor.
  • Spinach: For a pop of color.

Dietary Swaps:

  • Gluten-Free: Use your favorite gluten-free short cut pasta and ensure all store bough ingredients are labeled gluten-free, especially chicken broth.
  • Dairy-Free: Swap butter, cream, and Parmesan cheese for dairy-free versions. I really like to use coconut milk for savory soups and pastas as it gives just a hint of sweetness.
  • Vegetarian: Swap the chicken sausage for a plant-based sausage (such as Impossible Foods ground sausage) or omit it entirely. Use vegetable broth instead of chicken broth.
  • Vegan: Follow both vegetarian & dairy-free instructions.

Recipe Variations:

  • Make it Spicy: Add a bit of chili paste or red pepper flakes for some heat.
  • Use a different protein. Sliced chicken cutlets, ground pork sausage, ground turkey, shredded rotisserie chicken, or even shrimp are all good options.
  • Add extra veggies, such as chopped kale, diced zucchini or squash, sliced mushrooms, or roasted red peppers.

Tips & Recipe Notes:

  • If chicken sausage is purchased in links, slice or remove casings before cooking.
  • Deglaze the pot with white wine, and let simmer for a minute or two to burn off alcohol. If avoiding alcohol, deglaze the pan with a splash of broth.
  • Turn heat down before adding cream. This will prevent it from curdling.

Storage & Reheating:

  • Store leftover pasta in an airtight container in the refrigerator for up to 4 days.
  • Reheat on the stove top over medium-low heat, stirring often, until warmed through.

Marry Me Chicken Pasta

Ingredients
  

  • 3 tablespoons butter divided
  • 1 lb ground chicken sausage
  • 1 cup diced yellow or white onion about ½ onion
  • 1 tablespoon minced garlic
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • ½ cup sun-dried tomatoes in oil chopped
  • ¼ cup dry white wine
  • 2 cups chicken broth
  • 1 cup uncooked short-cut pasta penne, rotini, or similar
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 2 cups chopped spinach

Instructions
 

  • In a large pot or Dutch oven, melt 1 tablespoon of butter over medium-high heat.
  • Add ground chicken sausage and cook until browned and crumbled, about 5-6 minutes. Remove and set aside on a paper towel-lined plate.
  • Melt remaining 2 tablespoons butter in the same pot. Add diced onion and garlic, cooking 3-4 minutes until softened and fragrant.
  • Stir in tomato paste, Italian seasoning, sun-dried tomatoes, and wine. Simmer 1-2 minutes to cook off the alcohol.
  • Add chicken broth and uncooked pasta. Bring to a medium-high simmer and cook for 10 minutes, stirring occasionally, until pasta is tender and liquid has reduced.
  • Reduce heat to medium-low. Stir in heavy cream, Parmesan cheese, cooked chicken sausage, and spinach.
  • Stir until spinach wilts and everything is heated through. Taste and adjust seasoning as needed.
  • Serve warm, topped with extra Parmesan if desired.
