Creamy Ground Beef & Pasta

#19 in my '100 30 Minute Meals' series is the warm Creamy Ground Beef and Pasta. Made with cheese ravioli, browned ground beef, butter, onions, garlic, fresh thyme, Worcestershire sauce, broth, and cream.

Key Ingredients:

  • Cheese Ravioli: Tender, cheesy, comforting, and cooks quickly.
  • Ground Beef: Browned and crumbled.
  • Fresh Thyme, Garlic, & Worcestershire Sauce: Add herby, umami flavor.
  • White Wine: A dash of white wine deglazes the pan and adds a balancing acidity.
  • Broth & Heavy Cream: Create the savory, creamy sauce.
  • Nutmeg: Just a pinch to elevate the sauce.

Dietary Swaps:

  • Gluten-Free: Use a gluten free cheese ravioli and ensure beef broth is certified gluten free.
  • Vegetarian: Omit the ground beef and swap the beef broth for a veggie broth.
  • Alcohol-Free: Skip the white wine and instead use a splash of broth the deglaze the pan.

Recipe Variations:

  • Swap the beef for ground sausage or ground chicken.
  • Add sliced mushrooms. Saute along side the onions for added texture.

Tips & Notes:

  • Reserve some pasta water before draining. Starchy pasta water is great for smoothing and thinning a sauce when needed.
  • Don't overcook the ravioli. Ravioli only take a few minutes to cook. Once they rise to the top of the water, they are done.

Storage and Reheating:

  • Store leftovers in an airtight container in the fridge for up to 3 days
  • Reheat on the stove top over medium high heat adding a splash of broth or cream to loosen.

Creamy Ground Beef and Pasta

Made with cheese ravioli, browned ground beef, butter, onions, garlic, fresh thyme, Worcestershire sauce, broth, and cream.

Ingredients
  

  • 1 13 oz package refrigerated cheese ravioli
  • ½ lb ground beef
  • 2 tablespoon butter
  • ½ white onion diced
  • 1 tablespoon minced garlic
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon all-purpose flour
  • 2 tablespoon white wine
  • 1 cup beef broth
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 2 handfuls fresh spinach
  • Pinch ground nutmeg
  • Salt & pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Cook ravioli according to package directions. Reserve some pasta water, drain, and set aside.
  • In a large high-sided skillet, heat a touch of olive oil over medium-high. Add ground beef, season with salt and pepper, and cook until browned and crumbled. Transfer to a paper towel-lined plate.
  • Drain the grease from the pan. Melt butter over medium heat. Add diced onion and cook for 4 minutes, stirring often.
  • Add garlic, fresh thyme, and Worcestershire sauce. Cook 1 minute more.
  • Stir in flour and cook for 1 minute, stirring continuously.
  • Add white wine and cook another 1 minute.
  • Whisk in broth, then heavy cream, Parmesan, and spinach. Stir until spinach wilts and sauce thickens slightly.
  • Reduce heat. Add a pinch of nutmeg and season with salt and pepper to taste.
  • Add cooked ravioli and ground beef. Stir gently to combine, adding reserved pasta water as needed to loosen the sauce.
  • Serve warm with extra Parmesan and black pepper.

Notes

  • Reserve some pasta water before draining. Starchy pasta water is great for smoothing and thinning a sauce when needed.
