Garlic Roasted Tomatoes and Toast
Sweet roasted tomatoes, plenty of garlic, and creamy ricotta piled onto buttery toasted bread.
Ingredients
For Roasted Tomatoes:
- 1 cup cherry or grape tomatoes halved
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- ½ teaspoon Italian seasoning
- Salt & pepper to taste
For Toast:
- 2 slices crusty bread
- Butter
- ½ cup ricotta cheese
Instructions
- Preheat oven to 400°F.
- Add the tomatoes to a small baking dish. Toss with olive oil, garlic, Italian seasoning, salt, and pepper.
- Roast for about 15 minutes, or until the tomatoes are soft and beginning to burst.
- While the tomatoes roast, toast the bread until golden and spread each slice with butter.
- Spread ricotta over toast.
- Spoon the roasted tomatoes over the ricotta.
- Serve immediately.
