Garlic Roasted Tomatoes and Toast

#46 in my '100 30 Minute Meals' series is Garlic Roasted Tomatoes and Toast. Sweet roasted tomatoes, plenty of garlic, and creamy ricotta piled onto buttery toasted bread make a simple lunch, appetizer, or light dinner that somehow feels both rustic and a little fancy.

Ingredient Notes:

  • Cherry or grape tomatoes: Roasting brings out their natural sweetness and makes them incredibly jammy.
  • Ricotta: Creamy, mild, and the perfect contrast to the roasted tomatoes.
  • Garlic: Don't be shy, it's one of the best parts.
  • Italian seasoning: Adds just enough herb flavor without overpowering the tomatoes.
  • Crusty bread: Sourdough, Italian bread, or a good baguette all work beautifully.

Garlic Roasted Tomatoes and Toast

Ingredients
  

For Roasted Tomatoes:

  • 1 cup cherry or grape tomatoes halved
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • ½ teaspoon Italian seasoning
  • Salt & pepper to taste

For Toast:

  • 2 slices crusty bread
  • Butter
  • ½ cup ricotta cheese

Instructions
 

  • Preheat oven to 400°F.
  • Add the tomatoes to a small baking dish. Toss with olive oil, garlic, Italian seasoning, salt, and pepper.
  • Roast for about 15 minutes, or until the tomatoes are soft and beginning to burst.
  • While the tomatoes roast, toast the bread until golden and spread each slice with butter.
  • Spread ricotta over toast.
  • Spoon the roasted tomatoes over the ricotta.
  • Serve immediately.

  • Serve while roasted tomatoes are still warm.
  • Roasted tomatoes will keep in the fridge for up to 4 days.
