Tomato Rice
This southern-style Tomato Rice is made with long grain white rice, onions, garlic, fresh thyme, Worcestershire sauce, fire roasted diced tomatoes, and broth.
Ingredients
- 2 tablespoon butter
- ½ onion diced
- 1 tablespoon minced garlic
- 1 teaspoon fresh thyme leaves
- Splash of Worcestershire sauce
- 1 14.5 oz can fire-roasted diced tomatoes, not drained
- 2 cups chicken broth
- 1 cup long grain white rice
- Salt & pepper to taste
Instructions
- Melt butter in a large high-sided pan over medium heat.
- Add diced onion and cook for 4-6 minutes, stirring often, until softened.
- Add garlic, fresh thyme, and a splash of Worcestershire sauce. Stir and cook for about 1 minute.
- Add the undrained diced tomatoes, chicken broth, and rice. Stir to combine.
- Bring the mixture to a boil.
- Cover, reduce heat to medium-low, and simmer for 20-25 minutes, stirring occasionally to keep the rice from sticking to the bottom.
- Once the rice is tender, turn off the heat and leave covered for another 5-10 minutes.
- Fluff with a fork, season with additional salt and pepper if needed, and serve.
