#32 in my '100 30 Minute Meals' series is this Doritos Taco Salad. Made with browned & seasoned ground beef, black beans, shredded cheese, pico de gallo, and crushed Doritos. All topped with your favorite taco sauce and sour cream.

Key Ingredients:
- Lean Ground Beef: Lean ground beef produces less fat, which will be drained in this recipe. The beef is browned and then simmered with taco seasoning and a touch of broth. I highly recommend a Cheesy Taco seasoning!
- Romaine Lettuce: A crispy, crunchy lettuce with a mild flavor as the base.
- Doritos: For more taco-y crunch and flavor.
- Taco Sauce: To top the salad as a sort of 'dressing'. I love love love the Taco Bell sauces that can be found in most grocery stores, especially the chipotle flavor and avocado ranch!
- Additonal Toppings: Black beans, shredded cheddar cheese, fresh pico de gallo, & sour cream.

Dietary Swaps:
- Gluten-Free: Although Doritos don't technically contain any gluten products, many are not considered gluten-free due to cross contamination. Because of this, look for the 'Simply Organic' Doritos, as most of those are labeled gluten-free. Also ensure your taco sauce is labeled gluten-free.
- Dairy-Free: Omit the cheese or use a dairy free version. Also, use a dairy-free taco sauce and dairy-free Doritos, such as Sweet Chili or Salsa Verse flavors.
- Vegetarian: Omit the ground beef or swap it for a plant-based 'ground beef' such as Impossible Foods.


Recipe Variations:
- Use a fun flavor of Doritos. Doritos comes in well over 100 flavors (Did you know you can even get clam chowder or Mountain Dew flavored in some locations? But maybe save those for a different recipe.) This recipe would be great with flavors such as bbq or cool ranch.
- Try a different chip! Mr. Garlic & I loveeee walking tacos and have tried it with so many chips. Some of our faves over the years, Funyuns (surprisingly good), Cheetos, and Lay's Original chips.
- Try a different protein. Rotisserie or grilled chicken is a great choice!
- Add some extra veg. Corn, avocado or roasted rell peppers.
- Make it Spicy. Use hot versions taco seasoning, taco sauce, and Doritos. For even more heat add some jalapenos.

Tips & Recipe Notes:
- Don't add Doritos until ready to serve! This keeps the Doritos from getting soggy before you've had a chance to dig in.
- If your pico is very saucy or wet, use a slotted spoon to add it to the salad.
- If meal prepping, mix all of salad ingredients except for Doritos and store in an airtight container for up to 3 days. Add crushed Doritos when ready to serve.

Doritos Taco Salad
Made with browned & seasoned ground beef, black beans, shredded cheese, pico de gallo, and crushed Doritos. All topped with your favorite taco sauce and sour cream.
Ingredients
Taco Beef
- 1 lb lean ground beef
- 1 packet taco seasoning I love a cheesy taco variety
- ½ cup broth
Salad
- 1 romaine heart chopped
- 1 can black beans drained and rinsed
- 1 cup pico de gallo
- ½ cup shredded cheddar cheese
- 2 handfuls crushed Doritos
Toppings
- ¼ cup taco sauce Taco Bell's Creamy Chipotle or Avocado Ranch are my fave
- Sour cream to taste
Instructions
- In a large frying pan over medium heat, brown the ground beef until fully cooked.
- Drain most of the fat, then stir in taco seasoning and broth.
- Simmer for 2-3 minutes until saucy but not wet. Remove from heat and let cool 5-10 minutes.
- In a large mixing bowl, combine cooled beef, romaine, black beans, pico, cheddar cheese, and crushed Doritos.
- Plate and top with taco sauce and sour cream. Serve immediately.
