Looking for a simple, flavorful lunch? I’ve got you covered with this Cucumber Dill Rotisserie Chicken Salad recipe. It’s refreshing, tangy, and rich in all of the right places.

Plus, it can be whipped up in under 20 minutes and lasts a few days in the fridge. You can serve it on a bed of spring mix, wrapped in a tortilla, or eat it ‘as-is’ for a quick, delicious meal.

Cucumber Dill Chicken Salad- Must Love Garlic

Cucumber Chicken Salad Ingredients:

  • Rotisserie Chicken– de-boned and shredded. If you like, you can use a flavored rotisserie chicken for your chicken salad. Sometimes the grocery store will have ones such as Lemon Pepper, Cajun, Jerk Seasoning, etc. You can also use chopped grilled chicken.
  • Cucumber– for a cooling, refreshing crunch.
  • Mayonnaise– if mayo isn’t your thing, try using Greek Yogurt or Avocado
  • Dried Dill– dill is tangy with notes of citrus and often the flavor associated with pickles. If you don’t like dried dill, can also use fresh!
  • Paprika
  • Salt & Pepper
  • (Optional) Chives– for garnish

Substitutions & Suggestions:

  • Mayo isn’t your thing? Try subbing it out for Greek Yogurt, Avocado, or a mixture of both.
  • Try using last night’s leftover chicken! I’ve used both leftover grilled chicken and fried chicken for this. Both turned out fantastic.
  • Use fresh dill instead of dried! To convert, use 1 tablespoon of fresh dill per 1 teaspoon of dried dill.
  • Try adding red onion.
  • How should you serve cucumber chicken salad? Try your chicken salad on a bed of lettuce, as a wrap (I like Spinach Tortillas), as a sandwich, or eat it plain with a pack of crackers.

How to Make Cucumber Chicken Salad:

  • Prepare Ingredients: de-bone rotisserie chicken. Roughly chop meat (and skin if you like) of chicken, discarding any tendons or joints. Set aside until ready to use. Next, split cucumbers in half and scoop out & discard most of the seeds. Dice cucumbers. If cucumbers still look watery, try using a paper towel to soak up some of the moisture.
  • Mix-Using a gloved hand or a spatula, mix all salad ingredients in large mixing bowl until well combined. Add salt and pepper as needed.
  • Serve- your chicken salad on a bed of lettuce, as a sandwich, as a wrap in a tortilla, with crackers, or just eat plain with a fork.

Tips & Notes:

  • If cucumbers are too watery, try using a paper towel to dab them dry and soak up some of the moisture.
