What is Rotisserie Chicken?

Rotisserie is a method of cooking, also known as spit-roasting, where meat is skewered on a solid rod and turned next to a heat source such as an open fire or in an oven. Cooking chicken in this way creates evenly cooked, tender meat and delicious caramelized chicken skin.

  • Greek Yogurt– creates an extra creamy chicken salad without overwhelming the flavor.
  • Cucumber– for a cooling, refreshing crunch.
  • Fresh Dill & Dijon Mustard– for a little spice and tang.

Substitutions & Suggestions:

  • Try using last night’s leftover chicken! I’ve used both leftover grilled chicken and fried chicken for this. Both turned out fantastic.
  • If using dried dill, start with 1 teaspoon and work up from there.
  • Optional Additions: pickle relish, avocado, thinly sliced celery, lemon juice, crumbled feta cheese, dried cranberries, or nuts (such as pistachios) for even more crunch.

  • Rotisserie Chickens generally conatain 3-4 cups of meat. Adjust recipe ratios according to size of chicken and amount of meat.
  • Try this chicken salad on a bed of lettuce, as a wrap (I like Spinach Tortillas), as a sandwich, or eat it plain with a pack of crackers.
  • Store leftover salad in an airtight container in the refrigerator for up to 5 days. It may have some excess moisture after sitting for a few days due to the high water volume of the cucumbers. Mix well before serving to redistribute.
  • To clean the delicate fresh dill, place dill in a bowl of water and gently swirl them around.

Ingredients
  

  • 4 cups rotisserie chicken meat pulled from bone & roughly chopped
  • 1/3 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 cup cucumber diced
  • 1/2 cup red onion finely diced
  • 1-2 tbsp fresh dill finely chopped
  • 2 tsp fresh garlic minced
  • 2 tsp Dijon mustard
  • Sprinkle paprika
  • Salt & pepper to taste
  • Chives or green onions for garnish

Instructions
 

  • To Prepare Chicken: remove meat from the bone of rotisserie chicken. Roughly chop meat (and skin if you like) of chicken, discarding any tendons or joints.
  • To Prepare Cucumber: split cucumber in half and scoop out & discard most of the seeds. Dice cucumbers. If cucumbers are too watery, try using a paper towel to soak up some of the moisture.
  • Mix Chicken Salad: using a gloved hand or a spatula, gently mix all salad ingredients in large mixing bowl until well combined. Add salt and pepper to taste.
  • Serve: serve chicken salad immediately or refrigerate for an hour to chill.
