- Cottage Cheese: The main ingredient for the crust. If you've never had cottage cheese, I highly recommend giving it a try! It's soft, creamy, and milky in the best way. For this recipe, drain any excess moisture before blending.
- Eggs: Act as a binder for the crust.
- Parmesan Cheese, Italian Seasoning, & Powdered Garlic: Add flavor to the crust.
- Melted Butter & Minced Garlic: Brushed on to the crust for a 'garlic bread' flavor.
- Mozzarella Cheese: And lots of it! Shredded fresh for the best gooey melt.
Recipe Variations:
- Add Crumbled Bacon: For a salty, savory addition.
- A Drizzle of Spicy Honey: I know it might sound strange. If you've ever seen a bottle of honey on the table at a pizza restaurant, there's a good reason for it! A little spicy honey on cheesy crust is real good, the perfect balance of savory, sweet, and spice.
- Extra Cheese: Swap some of the shredded mozzarella for feta cheese, goat cheese, or fresh mozzarella.

- Blend Crust Ingredients. Cottage cheese, eggs, Parmesan, Italian seasoning, garlic powder, pepper until smooth.
- Bake Crust. Spread on parchment-lined 9x13 pan, bake at 400°F for 30-35 min until golden and set.
- Add Garlic Butter. Melt butter, mix with minced garlic, brush over baked crust.
- Top with Cheese. Add mozzarella (and any extras like Parm, herbs, or bacon).
- Melt. Bake or broil just until cheese melts (watch closely if broiling).
- Cool & Slice. Let rest 5-10 minutes, remove from parchment, slice into sticks.

Tips & Notes:
- Drain excess moisture from the cottage cheese. This will help the crust set when baked.
- If broiling, keep a close eye on it! Not only can cheese go quickly from golden to burnt, but parchment paper can burn and catch fire (ask me how I know).
- No food processor or blender? No problem. Just stir the crust ingredients until thoroughly combined.
- Cool before removing from parchment and slicing.
- After adding 'dough', shake or tap pan to even it out. Even dough = an even cook.
Storage & Reheating:
- Store cooled breadsticks in an airtight container for up to 3 days.
- Reheat:
- In the oven, bake at 350 for 8-10 minutes until warmed through.
- In the air fryer, air fry at 350 for 3-6 minutes (depending on your air fryer) until warm and crisp.
- Microwave not recommended. I tried this and although the breadstick warmed through, it was a little soggy.

- ¼ cup grated Parmesan
