Tomato Rice

This southern-style Tomato Rice is made with long grain white rice, onions, garlic, fresh thyme, Worcestershire sauce, fire roasted diced tomatoes, and broth.

Ingredients
  

  • 2 tablespoon butter
  • ½ onion diced
  • 1 tablespoon minced garlic
  • 1 teaspoon fresh thyme leaves
  • Splash of Worcestershire sauce
  • 1 14.5 oz can fire-roasted diced tomatoes, not drained
  • 2 cups chicken broth
  • 1 cup long grain white rice
  • Salt & pepper to taste

Instructions
 

  • Melt butter in a large high-sided pan over medium heat.
  • Add diced onion and cook for 4–6 minutes, stirring often, until softened.
  • Add garlic, fresh thyme, and a splash of Worcestershire sauce. Stir and cook for about 1 minute.
  • Add the undrained diced tomatoes, chicken broth, and rice. Stir to combine.
  • Bring the mixture to a boil.
  • Cover, reduce heat to medium-low, and simmer for 20–25 minutes, stirring occasionally to keep the rice from sticking to the bottom.
  • Once the rice is tender, turn off the heat and leave covered for another 5–10 minutes.
  • Fluff with a fork, season with additional salt and pepper if needed, and serve.
