Ingredients
  

  • 2 slices bread such as sourdough whole grain, or gluten-free
  • 1 tablespoon butter softened
  • 1 large ripe avocado mashed
  • ¼ cup cottage cheese
  • 2-4 slices ripe tomato
  • 1 tablespoon extra virgin olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh basil leaves sliced or torn

Instructions
 

  • Toast the bread slices until golden and warm.
  • Spread butter evenly over each warm toast slice.
  • Layer mashed avocado evenly on each slice.
  • Add cottage cheese over the avocado layer.
  • Arrange tomato slices on top of the cottage cheese.
  • Drizzle extra virgin olive oil over the toast.
  • Sprinkle salt, pepper, and finish with fresh basil leaves.
  • Serve immediately.

Notes

  • You can substitute cottage cheese with ricotta, cream cheese, or goat cheese.
