Ingredients
  

For the Salad

  • 2 cups cherry or grape tomatoes halved
  • 1 English cucumber seeded and sliced
  • 8 oz block feta cheese cubed
  • ½ cup olives
  • ¼ red onion thinly sliced

For the Dressing

  • ½ cup extra virgin olive oil
  • 2 tablespoon chopped fresh parsley
  • 1 tablespoon red wine vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and freshly cracked black pepper to taste

Instructions
 

  • Add the tomatoes, cucumber, feta, olives, and red onion to a large mixing bowl.
  • In a small bowl or measuring cup, whisk together the olive oil, parsley, red wine vinegar, garlic, Dijon mustard, honey, salt, and pepper until well combined.
  • Pour the dressing over the salad and gently toss until everything is evenly coated.
  • Let the salad rest for 10–15 minutes before serving to allow the flavors to come together.
  • Serve chilled or at room temperature.

Notes

  • Scoop out the cucumber seeds for the best texture.
  • Let the salad sit for about 10-15 minutes before serving so the vegetables soak up all that dressing.
  • If making ahead, wait to add the feta and dressing until just before serving.
  • Taste before serving, you may only need a small pinch of salt since feta and olives are naturally salty.
