Pulled Pork Cuban Eggs Benedict
Cuban Pork Sandwich fans will LOVE these Pulled Pork Cuban Eggs Benedict. They have all of the traditional elements: pulled pork, melty Swiss cheese, pickles, and ham, but there’s an added richness from a runny fried egg and savory mustard cream sauce.

- 2 cups carnitas or pulled pork
- 4 large slices bread toasted
- 4 slices Swiss cheese
- 4 slices thick-cut ham
- 1 tbsp butter
- 4 eggs
- 2 tbsp pickle relish
For Mustard Cream Sauce:
- 1 tbsp salted butter
- 1 tbsp shallot finely minced
- 1/2 tsp garlic minced
- 1 tsp all-purpose flour
- 1 cup heavy cream
- 1 tbsp Dijon mustard
- 1 tbsp yellow mustard
- Salt & pepper to taste
Make Mustard Cream Sauce:
In a medium sauce pan, melt 1 tbsp butter over med-low heat. Once melted, add finely minced shallot and minced garlic. Cook, stirring often, for 1-2 minutes until fragrant.
Sprinkle in flour and stir until fully combined and no lumps of flour remain. Slowly whisk in heavy cream, 1/2 cup at a time.
Turn heat to low and whisk continuously until sauce has thickened, about 4-7 minutes. The texture of the sauce should be thick, but still smooth and pour-able (similar to hollandaise).
Once desired texture is reached, remove pan from heat and whisk in Dijon mustard and yellow mustard. Add salt & pepper to taste
Fry Eggs:
Heat a frying over medium heat. Add 1 tbsp of butter and melt.
Once melted, add eggs, careful not to break the yolks. Sprinkle eggs with a touch of salt and pepper, cover pan, and let eggs cook for about 2 minutes until the whites have fully set but the yolks are still runny. Remove from heat.
Construct:
Lay 4 pieces of toasted bread on a baking sheet and top each one with a slice of Swiss cheese. Place baking sheet underneath a broiler until the cheese has melted.
Top each toasted cheesy bread with pickle relish, slice of ham, carnitas or pulled pork, fried egg, and finally mustard cream sauce. Enjoy!
- Pulled Pork– for this you have a lot of options. You could grab some to-go from a BBQ restaurant or most grocery stores will have pre-made pulled pork in the deli or freezer section. - If buying pre-made or frozen pulled pork, look for an unsauced or sauce on the side version.
- Toasted Bread– toasted bread holds it’s structure better when exposed to sauce and other ingredients with a lot of moisture. Toasted Sourdough or even Sweet Hawaiian work great for this recipe.
- If using English muffins, split each serving between two muffin halves and make an extra egg.
- The mustard cream sauce tastes quite strong on it's own, but mellows out when combined with the other ingredients. Add more mustard for a stronger flavor.
- For a bit of spice, try adding Tabasco sauce, cayenne pepper, or creamed horseradish.
- Other great additions: slice of tomato, sliced avocado, or thinly sliced red onion.
