Ingredients

  • 1-2 tablespoons butter
  • 4 slices sourdough bread
  • 2 eggs
  • 2 tablespoons cream
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • Pinch ground nutmeg
  • Pinch salt
  • Syrup for serving

Instructions

  • In a wide, shallow bowl, whisk together eggs, cream, vanilla, cinnamon, nutmeg, and salt until smooth.
  • Melt butter in a frying pan over medium heat.
  • While the butter melts, dip a slice of sourdough into the egg mixture. Let it soak for a few seconds per side, ensuring the bread is evenly coated.
  • Transfer soaked bread to the pan and cook for 3–4 minutes per side, or until golden brown and crisp on the edges.
  • Repeat with remaining bread, adding more butter to the pan as needed.
  • Serve warm with extra butter and syrup.

Notes

  • Don't overcrowd the pan. No more than 2 slices at a time.
  • Let the bread absorb the egg mixture 10-15 seconds per side. Long enough for it to coat the bread and soak in some, but not so long it becomes soggy.
  • Wipe the pan between batches. If butter begins to get too brown, use a paper towel to wipe the pan in between batches and start with fresh butter.
