1-2 tablespoons butter 4 slices sourdough bread 2 eggs 2 tablespoons cream 1 teaspoon vanilla extract ¼ teaspoon ground cinnamon Pinch ground nutmeg Pinch salt Syrup for serving
In a wide, shallow bowl, whisk together eggs, cream, vanilla, cinnamon, nutmeg, and salt until smooth.
Melt butter in a frying pan over medium heat.
While the butter melts, dip a slice of sourdough into the egg mixture. Let it soak for a few seconds per side, ensuring the bread is evenly coated.
Transfer soaked bread to the pan and cook for 3–4 minutes per side, or until golden brown and crisp on the edges.
Repeat with remaining bread, adding more butter to the pan as needed.
Serve warm with extra butter and syrup.
Don't overcrowd the pan. No more than 2 slices at a time.
Let the bread absorb the egg mixture 10-15 seconds per side. Long enough for it to coat the bread and soak in some, but not so long it becomes soggy.
Wipe the pan between batches. If butter begins to get too brown, use a paper towel to wipe the pan in between batches and start with fresh butter.
