Quick & Easy Spam Fried Rice

Made with crispy Spam, eggs, veggies, and rice all tossed in a flavorful blend of hoisin and soy sauces.

Ingredients
  

  • 1 tablespoon neutral cooking oil
  • 12 oz Spam cubed
  • 1 cup shredded cabbage or coleslaw mix
  • ½ cup frozen peas
  • 1 tablespoon minced garlic
  • 1 green onion sliced
  • 4 large eggs
  • 4 cups leftover rice
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • Optional: sesame seeds for garnish

Instructions
 

  • Cook the Spam: Heat oil in a large skillet or wok over medium-high heat. Add cubed Spam and cook 4–6 minutes until browned and crispy. Transfer to a paper towel-lined plate.
  • Cook the Vegetables: In the same pan, sauté cabbage mix for about 4 minutes until slightly softened. Add peas, garlic, and green onion. Cook 1–2 minutes more.
  • Scramble the Eggs: Crack eggs directly into the pan and scramble until fully cooked.
  • Combine Everything: Add rice and cooked Spam back to the pan. Stir well. Add soy sauce and hoisin sauce and toss until evenly coated.
  • Finish & Serve: Cook another 2–3 minutes until everything is hot and lightly crisped. Garnish with extra green onion and sesame seeds if desired.

Notes

  • Chilled leftover rice works the best for fried rice.
  • Don't stir the SPAM too often while frying. Letting it sit for a minute or so per side allows it to get nice and crispy.
  • The SPAM & soy sauce already contain quite a but of salt, so taste before adding more.
  • Store leftovers in an airtight container for up to 4 days.
