Perfect Scrambled Eggs

Made with a few eggs, a bit of cream, salt and pepper, and melted butter. With a few simple techniques you can make these perfect. fluffy eggs every single time

Ingredients
  

  • ½ tablespoon chilled butter
  • 4 large eggs + 1 extra yolk
  • 2 tablespoon half & half
  • teaspoon kosher salt
  • Freshly cracked pepper

Instructions
 

  • Crack eggs into small mixing bowl, add half & half, salt, and pepper. Beat gently with a fork until just combined.
  • Heat a nonstick skillet over medium-high. Add butter and let it melt.
  • Pour in eggs and cook, stirring slowly and continuously with a rubber spatula.
  • When curds begin to form, reduce heat to low. Continue stirring until soft, shiny, and just set.
  • Remove from heat while slightly underdone. Serve immediately with herbs or cheese if desired.

Notes

  • Beat eggs gently with cream and seasoning in a small mixing bowl before adding to frying pan.
  • Use a non-stick frying pan and rubber spatula.
  • Start on medium-high heat and finish on low for soft, creamy curds.
  • Remove eggs from heat while slightly underdone as they continue cooking while off heat.
