½ tablespoon chilled butter 4 large eggs + 1 extra yolk 2 tablespoon half & half ⅛ teaspoon kosher salt Freshly cracked pepper
Crack eggs into small mixing bowl, add half & half, salt, and pepper. Beat gently with a fork until just combined.
Heat a nonstick skillet over medium-high. Add butter and let it melt.
Pour in eggs and cook, stirring slowly and continuously with a rubber spatula.
When curds begin to form, reduce heat to low. Continue stirring until soft, shiny, and just set.
Remove from heat while slightly underdone. Serve immediately with herbs or cheese if desired.
Beat eggs gently with cream and seasoning in a small mixing bowl before adding to frying pan.
Use a non-stick frying pan and rubber spatula.
Start on medium-high heat and finish on low for soft, creamy curds.
