Ingredients
  

  • 3 cups dry rotini pasta
  • 1 tablespoon butter
  • 1 lb lean ground beef
  • 2 cups diced yellow onion
  • 8 oz sliced baby bella mushrooms
  • 1 tablespoon minced garlic
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 teaspoon onion powder
  • 1 tablespoon all-purpose flour
  • 2 cups beef broth
  • 1 cup sour cream
  • 1 teaspoon kosher salt plus more to taste
  • Fresh cracked black pepper to taste
  • Pinch of ground nutmeg
  • Chopped parsley for garnish

Instructions
 

  • Bring a large pot of generously salted water to a boil. Cook rotini according to package directions. Drain and set aside.
  • In a deep skillet or Dutch oven, melt butter over medium heat. Add ground beef, onions, and mushrooms. Lightly season with salt and pepper. Cook until beef is browned and mushrooms/onions are tender (about 7 minutes).
  • Stir in garlic, Worcestershire sauce, Dijon mustard, and onion powder. Cook 1–2 minutes. Sprinkle with flour and stir to combine.
  • Slowly whisk in beef broth. Add sour cream, nutmeg, salt, and cracked pepper. Simmer on medium-low for 4–6 minutes until thickened.
  • Gently fold in the cooked pasta, simmer a minute or two to warm through. Taste and adjust seasoning. Garnish with parsley and serve hot.
