Garlic Pommes Frites with Cajun Dipping Sauce
Twice fried russet potatoes tossed in garlic butter, Parmesan, and parsley, paired with a tangy-spicy Cajun dipping sauce.

For Pommes Frites:
- 4 Russet potatoes
- 1.5 L frying oil peanut, canola, or vegetable
- 1 teaspoon kosher salt
- ½ teaspoon garlic powder
- ⅛ teaspoon pepper
- 1 tablespoon butter
- 1½ teaspoon minced garlic 2–3 cloves
- ¼ cup grated Parmesan cheese
- 1 tablespoon dried parsley
For Cajun Dipping Sauce:
- ½ cup mayo
- 1 tablespoon spicy or Dijon mustard
- 1 –2 teaspoon creamed horseradish to taste
- 1 teaspoon minced garlic
- ½ teaspoon Worcestershire sauce
- ½ teaspoon lemon juice
- ½ teaspoon Cajun seasoning
- ¼ teaspoon paprika
- ¼ teaspoon kosher salt
Peel potatoes and cut into ¼–½ inch sticks. Soak in cold water for 1 hour.
Make dipping sauce, whisk ingredients in a small bowl and chill. Mix salt, garlic powder, and pepper for fries in another bowl.
Drain potatoes, pat dry. Heat oil to 325°F and fry in batches for 5 minutes. Drain fries on a paper towel lined plate.
Increase oil to 375°F; fry potatoes again 1–2 minutes until crisp. Season immediately with garlic powder mixture.
Toss hot fries in butter and garlic, then sprinkle Parmesan and parsley. Serve with Cajun dipping sauce.
- Soak the fries before frying. This creates removes some exterior starch for a crispier fry.
- Don't overcrowd the frying pot. Cook in batches if needed.
- Use a thermometer to watch the oil temperature and keep it steady.
- You can make these in the air-fryer instead! Spray potatoes with oil and air-fry at 375F (190C) for 15-20 minutes.
