Cilantro Lime Rice
This cilantro lime rice is made with onions, garlic, and rice cooked in a blend of cilantro, , broth, coconut milk, and lime juice.

For Coconut Cilantro Sauce:
- 1 handful fresh spinach
- 1 handful fresh cilantro
- 1½ cups chicken broth
- 1 cup unsweetened coconut milk
For Rice:
- 2 tablespoon salted butter
- ¼ white or yellow onion diced
- 1 tablespoon minced garlic
- 1½ cups long grain white rice
- 3 tablespoon fresh lime juice
- Salt & pepper to taste
Add spinach, cilantro, chicken broth, and coconut milk to a blender. Blend until smooth and well combined.
In a large high-sided pan, melt butter over medium heat.
Add diced onion and sauté for about 4 minutes, until softened.
Add garlic and cook for another 1 minute.
Add rice and stir until the rice is coated in the butter and onion mixture.
Pour in the green sauce and bring to a boil.
Cover the pan, reduce heat to medium-low, and simmer for about 15 minutes, stirring occasionally.
Stir in lime juice and season with salt and pepper to taste.
Cover, turn off the heat, and let the rice sit for another 5–10 minutes, or until tender.
Fluff with a fork and serve.
