Ingredients

  • 3 cups rotisserie chicken shredded or chopped
  • ¼ cup red onion roughly chopped
  • ¼ red bell pepper seeds removed, roughly chopped
  • ½ cup shredded sharp cheddar cheese

Cajun Dressing:

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon Dijon mustard
  • 1-2 teaspoon creamed horseradish to taste
  • ½-1 teaspoon Cajun seasoning to taste
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon lemon juice
  • Fresh chives chopped

Instructions

  • Add chicken, red onion, and bell pepper to a food processor. Pulse 3–4 times until just broken down (do not over-process).
  • Add shredded cheddar; pulse once or twice to combine.
  • In a separate bowl, whisk together mayo, sour cream, Dijon mustard, horseradish, Cajun seasoning, Worcestershire, and lemon juice.
  • Fold the dressing into the chicken mixture until well coated. Taste and adjust seasoning with more Cajun spice, salt, or lemon juice if needed.
  • Transfer to a serving bowl, sprinkle with fresh chives, and serve with crackers, over greens, or on bread.

Notes

  • Pulse ingredients gently in the food processor, so that they are well incorporated, but keep some texture.
  • If you are sensitive to spice, start with half of the Cajun seasoning and horseradish in the dressing and adjust from there.
  • For a chunkier chicken salad, chop all ingredients by hand instead of using a food processor.
