Cajun Chicken Salad
Made with rotisserie chicken, red bell pepper, red onion, sharp cheddar cheese, and a creamy, slightly spicy Cajun seasoning and horseradish sauce.

- 3 cups rotisserie chicken shredded or chopped
- ¼ cup red onion roughly chopped
- ¼ red bell pepper seeds removed, roughly chopped
- ½ cup shredded sharp cheddar cheese
Cajun Dressing:
- ¼ cup mayonnaise
- ¼ cup sour cream
- 1 tablespoon Dijon mustard
- 1-2 teaspoon creamed horseradish to taste
- ½-1 teaspoon Cajun seasoning to taste
- ½ teaspoon Worcestershire sauce
- ¼ teaspoon lemon juice
- Fresh chives chopped
Add chicken, red onion, and bell pepper to a food processor. Pulse 3–4 times until just broken down (do not over-process).
Add shredded cheddar; pulse once or twice to combine.
In a separate bowl, whisk together mayo, sour cream, Dijon mustard, horseradish, Cajun seasoning, Worcestershire, and lemon juice.
Fold the dressing into the chicken mixture until well coated. Taste and adjust seasoning with more Cajun spice, salt, or lemon juice if needed.
Transfer to a serving bowl, sprinkle with fresh chives, and serve with crackers, over greens, or on bread.
- Pulse ingredients gently in the food processor, so that they are well incorporated, but keep some texture.
- If you are sensitive to spice, start with half of the Cajun seasoning and horseradish in the dressing and adjust from there.
- For a chunkier chicken salad, chop all ingredients by hand instead of using a food processor.
