Roast Garlic- Preheat oven to 400. Peel most of the outer layers of garlic bulbs. Cut off the tops to expose cloves. Drizzle each garlic bulb with a but of olive oil and tightly wrap each in aluminum foil. Place bulbs on a baking sheet and roast 35-40 minutes. Allow bulbs to cool enough to easily touch, then peel gently peel cloves.
Mix and Serve: In a small serving bowl, mix extra virgin olive oil with dill, onion powder, dried oregano, marjoram, salt and pepper. Top with roasted garlic and garnish with fresh dill. Add a little more pepper and salt if needed, and serve with crusty bread.
