Eggs baked in a spicy tomato sauce with melty mozzarella cheese. It can be eaten in a bowl as a stew, but I prefer using it as dip for crusty bread. The more carbs the better, amiright?

- Butter
- Onion
- Jalapeno Slices
- Minced Garlic
- Marinara Sauce
- Eggs
- Seasoned Pepper
- Mozzarella
- Dried Basil
- Seasoned Pepper
- Salt & Pepper
- Crusty Bread

How to Make Italian Eggs in Purgatory:
- Preheat oven to 350.
- On the stove, heat an oven safe skillet over medium heat. Melt butter, add onion and cook 4-5 minutes. Add jalapenos & garlic, cook 1-2 minutes. Add salt, seasoned pepper, and cracked pepper. Stir in marinara and dried basil.
- Remove skillet from heat. Crack eggs into sauce and top with mozzarella. Bake 12-14 minutes uncovered until egg whites are cooked.
- Top with pepper and basil & dip away, my friends.

- 1/2 onion diced
- 1 tbsp sliced jalapeno
- 1 tbsp minced garlic
- 24 oz marinara
- 3-4 eggs
- 1 tsp seasoned pepper
- 4 oz mozzarella
- 1 tbsp dried basil
- 1/4 tsp salt
- Cracked black pepper to taste
- Crusty bread
Instructions
- Preheat oven to 350.
